Preheat the oven to 400F/200C.
Step 2
Place the tomato halves, ginger and garlic head on a baking tray.
Step 3
Drizzle with olive oil, salt and pepper and bake in the centre of the oven for 20 minutes.

Add the chopped onion and the chilli pepper to the tray and bake for another 20 minutes.
Step 5
Remove the ginger, chilli pepper and garlic from the tray. Place the baked tomatoes and onions in a large saucepan. Make sure to add any liquid the tomatoes left in the tray as well. That's really sweet and delicious and will make your soup taste better.
Step 6
Peel the ginger and cut it into small cubes. Add to the saucepan as well.
Step 7
Remove the stem from the chilli pepper and add it to the saucepan.
Step 8
Press on the garlic and squeeze out the baked, smooth garlic paste. Add it to the sauce pan.
Step 9
Add the broth to the sauce pan and mix well. Simmer for 10 minutes on low heat.
Step 10
Using a handheld blender, blend the contents of the pan. The result will be your spiced soup. Taste it and adjust the seasoning if needed.
Step 11
Enjoy the spiced tomato soup with croutons or crusty bread! Keeps in the fridge for up to 3 days.
