Instructions 1. Rinse the spinach and squeeze out any excess liquid. Set aside.2. Heat the oven to 180 degrees C.3. Clean the mushrooms and cut out the stems.4. Arrange the mushrooms on a baking tray and place a dollop of butter on each.5. Place the mushrooms in the oven to allow them to partially cook through.6. Heat a large skillet on medium high. Add the chopped bacon and sauté until it begins to render some of its fat.7. Add the chopped onion and garlic. Sauté until onions are translucent.8. Beat the eggs and cream.9. Add the spinach and allow it to partially wilt in the pan. Turn off the heat.10. Add the egg and cream mixture, then the grated Parmesan, leaving some over to top the mushrooms.11. Season with nutmeg, salt and pepper.12. Remove the mushrooms from the oven and spoon filling into the cavity of each. Sprinkle the remaining Parmesan over the top of each.13. Return to the oven for 8 to 10 minutes to cook through.14. Turn on the grill to brown the topping.15. Spoon any excess liquid released from the over the top and serve immediately.
