Step 1
Put the Chipotle into the food processor or blender, then go ahead and add one tablespoon of Adobo paste from the canned Chipotle.

Place all other ingredients like the mayonnaise, plain Greek yogurt, chopped cilantro, and ground cumin among others in the food processor or blender, with your Chipotle Chile and then season it with kosher salt.
Step 3
Whizz up all of the ingredients in the blender to form the paste, you must blend it until it acquires a smooth uniformity. The period for which it will take for you to acquire this smooth consistency is about 2 to 3 minutes. Therefore, you should whizz the mixture for a good 3 minutes so that you can acquire that lovely creamy mixture.
Step 4
After you have acquired the desired smooth consistency, you can go ahead and empty your food processor or blender. Pour the southwestern sauce into a bowl. Place the bowl in a fridge, this will allow your paste to have time to cool. You should leave it in the fridge for about 30 minutes before you start preparing the sandwiches. After the 30 minutes have subsided the southwestern Chipotle paste will be ready for use.
