Step 1

Preheat oven to 400 degrees.

Step 2

Chop up sweet potato. On a baking sheet, toss with avocado oil spray, sea salt, pepper, garlic powder and chili powder to bake. Cook for 30 minutes. Flipping half way through.

Step 3

Cook quinoa according to package.

Step 4

Prepare chili lime vinaigrette by mixing together ingredients. Set aside.

Step 5

In a large bowl, add cooked quinoa, black beans, pumpkin seeds, red onion, cilantro and roasted sweet potato.

Step 6

Pour chili lime vinaigrette on top to mix in. Toss to coat.

Step 7

Adjust seasonings if needed.

Step 8
