Step 1
Step 1 Heat oven to 425 degrees F. Line two baking sheets with parchment paper and set aside.
Step 2
Step 2 Slice tofu into 1/4-inch-thick slabs and dry on a paper towel. Arrange tofu on one half of a prepared baking sheet. Using a pastry brush, lightly brush with oil. On the other half of the baking sheet, spread the mushrooms out and lightly toss with 2 tablespoons oil. Season with salt and pepper.
Step 3
Step 3 On a second lined baking sheet, toss the kidney beans and grated beets with 1 tablespoon oil. Season with salt and pepper and then spread the mixture into one layer.
Step 4
Step 4 Transfer both baking sheets to the oven. Roast bean-beet mixture, tossing occasionally, until beans begin to split and beets are tender and golden, about 15 minutes. Roast mushrooms and tofu until golden and most of the liquid has evaporated, about 25 minutes. Set aside and let cool.
Step 5
Step 5 Place the cashews in a food processor, such as a Cuisinart fitted with a metal blade, and pulse until coarsely ground.
Step 6
Step 6 When the bean-beet mixture has cooled, add it to the food processor. Also add the mushrooms, tofu, panko, cheese, eggs, mayonnaise, scallion, garlic, paprika and 3/4 teaspoon salt. Pulse until ingredients are incorporated, do not over-pulse.
Step 7
Step 7 Add the tempeh and the rice, pulse to incorporate 3-4 more times. Note, you want small chunks, not a smooth mixture.
Step 8
Step 8 Scrape mixture into a bowl and chill at least 2 hours to help firm. At this point you can make into patties and you can freeze for future use.
Step 9
Step 9 When you are ready to make the burgers, divide mixture into 6 equal portions and form each portion into a patty about 1 inch thick. Note, the burgers should be refrigerated until you are ready to cook. (The burgers tend to grill better when they start out cold).
Step 10
Step 10 Heat the grill. Using a pastry brush, lightly brush the burgers with oil to prevent sticking. Cook the burgers over a low flame until they are charred on both sides and firm when you press on them, 4 to 6 minutes per side. If they start to burn before they firm up, move them to the sides of the grill to finish cooking over indirect heat. Alternatively, you can cook these on a grill pan or in a skillet over low heat.
Step 11
Step 11 Serve hot with your favorite toppings and condiments.
