Step 4
Wrap the dough in cling film and place in the fridge until later.
Step 5
For the filling, peel, core and quarter the apples. Place all the filling ingredients in the Thermomix mixing bowl and shred until you have a coarse mixture on setting 2 Sec./Speed 4.
Step 6
If you don't have a Thermomix, place the filling ingredients in a food processor and shred into a coarse mixture.
Step 7
Take the pastry and cut off a third. Take the remaining 2/3rds and roll out to line your buttered pastry dish. Leave enough to slightly overlap the edges. Place the filing in the pastry lined pie dish. Now roll out the remaining pastry to make the lid. Place on top of the filling and press the edges together to seal it. Cut a few steam holes in the pastry and use any leftover pastry to decorate your pie.
Step 8
Brush the pie with the egg white and place in the oven for 45 minutes until baked. Serve warm with vanilla ice cream!
