Step 1
Place the water, olive oil and dry active yeast in the mixing bowl. Warm 2 Min. / 37°C / Speed 2.
Step 2
If you don't have a Thermomix, place the water, olive oil and dry active yeast in a medium saucepan. Warm on medium heat until lukewarm.
Step 3
Add the spelt flour, salt and sugar and knead 2 Min. / Kneading function.
Step 4
If you don't have a Thermomix, pour the warmed yeast mixture in a large bowl. Add the spelt flour, salt and sugar and knead until smooth.
Step 5
Place on a floured surface and shape into a large rectangle using your fingers. The rectangle should be as wide as your 2-pound loaf tin. Roll up lengthways and place seam side down in the 2-pound loaf tin lined with greaseproof paper. Cover with a tea towel and leave to rise for 1 hour.
Step 6
Meanwhile, preheat the oven to 220°C. When the bread is risen until almost double the size, uncover and place in the oven along with 3 ice cubes in the bottom. Bake for 15 minutes, then turn down to 200°C and bake for another 25-30 minutes until the bread is golden and sounds hollow when tapped.
Step 7
Remove from the oven and leave to cool entirely on a wire cooling rack. Slice up and enjoy!
