Combine all ingredients in a mixing bowl and stir until just blended.

Beat for 3 minutes, using a wooden spoon, or a electric mixer on medium speed.
Step 3
Bake at 180C in a greased loaf tin for 35-40 minutes, or 2 x 18 cm sandwich tins for 25 minutes.
Step 4
When cool, turn out of tins onto a wire rack.
Step 5
Ice as desired when cold.
