Step 1
take gluten free matzah and run it under tap for 30 seconds to ensure it gets totally wet. Place on a paper towel on counter.
Step 2
While matzah softens, prep rest of ingredients so your ready to move fast. Chop tomato and onions. Grate cheese. Open and drain tuna.
Step 3
Using a medium size bowl, beat egg so its ready to dip matzah wrap in.
Step 4
Check on wet matzah. It should be soft enough to bend without breaking. If not splash with more water and let sit a few more minutes.
Step 5
When matzah is soft enough, heat a frying pan of medium.
Step 6
Take matzah and cut a slit in bottom half to the middle of matzah (see video for details) and place a little of each ingredient on each of the four corners. Imagine if it was a paper folded into 4 squares. Place tuna on first square, then tomatoes, then cheese in third square and onions in last square.
Step 7
Carefully fold tuna square up and over the tomato square. Then fold that to the right onto cheese square, and lastly fold all that super carefully down over onions.
Step 8
you should get 1 small very thick square. Dip that in bowl with egg and quickly place on hot pan.
Step 9
let it cook for 1-2 minutes and flip over.
Step 10
Remove from pan and slice in half to eat like a sandwich.
