Step 1

Fry the turkey in a hot saucepan without any added fats with the skin side down for 2-3 minutes, then turn it over and fry the other side for 1 minute. Baste it with the apple juice, add salt to taste and a couple of sprigs of rosemary and continue cooking, covered, for 25 minutes. Remove the cover and cook gently for another 30 minutes, turning occasionally.

Step 2

For the green onions and apples: Cut off the ends of the green onions and cut them in half lengthwise without peeling them. Heat a pan with a drizzle of oil and a sprig of rosemary and cook the green onions in it for 3 minutes with the cut side down. Turn them over and continue cooking for another 3-4 minutes. Cut the apples into 8 wedges and remove the cores. Fry them in a pan with a pat of butter for 1-2 minutes per side, until they start to turn golden. Remove from heat and add salt to taste. Serve the braised turkey with the apples and green onions.
