Heat 2 tbsp oil in a large skillet on medium-high heat. Add the chicken and sprinkle generously with Dan-O's Italian-O ™ Seasoning, stir to mix well. Cook, stirring occasionally for about 3-5 minutes and remove from skillet. Reduce heat to medium and add 1 tbsp oil to skillet. Add the shallot and cook about 1 minute until lightly browned. Add the sun-dried tomatoes, garlic, and cook about 1 minute. Mix in the white wine and scrape the bottom of the skillet with a wooden utensil to get all that yummy goodness mixed in. Simmer until the wine has reduced by half. Stir in the heavy cream and parmesan cheese then add the spinach a handful at a time, stirring and cooking until all leaves are wilted in the sauce. Put the chicken back in the skillet, stir it all up and simmer for about 5 minutes to warm up the chicken and thicken the sauce. Serve over your favorite pasta!
