Step 1

Spaghetti Squash: Preheat oven to 400º F. Cut spaghetti squash into rings and remove the seeds.

Step 2

Place on a baking sheet lined with parchment paper and drizzle with olive oil, sprinkle salt and pepper. Bake for 25 minutes, or until tender. Set aside to allow to slightly cool and then with a fork start shredding the squash.

Step 3

Toss the shredded squash in the sauce and place on buns. Top with additional bbq sauce if desired, shredded cabbage and pickles.
