Combine ingredients into small bowl and set aside

Preheat oven to 400F degrees

Prepare two sheet pans with parchment paper

Add diced butternut squash to one sheet pan and drizzle with oil

Add diced broccoli to other sheet pan and drizzle with oil

Sprinkle both the broccoli and squash with salt and spice mixture.

Place in 400F degree oven and let roast for 20 minutes (broccoli is often done 5 minutes or so before the squash)

Remove from oven and set aside

In a large pan heat oil

Add onion and let cook until translucent, about 2-3 minutes

Add salt and spice mixture

Add broth and tomato paste and mix well

Add rinsed beans and with a masher, mash slightly, you'll still want some beans whole.

Add your corn and mix to combine

When your broccoli is done add your broccoli

When squash is done add the squash to the pan and mix to combine.

Taste filling and check if needs more salt.

Save one of your sheet pans and keep your oven on

Slightly warm your tortillas either over a flam or in the microwave, just so they are easier to roll

On a flat surface place your tortillas that have been warmed, add 1/4 cup of the filling and cheese (optional)

Roll up like a burrito, fold in short sides first and then the long side to roll up tight

Place burrito seam down on the sheet pan with parchment paper

Repeat with all your burritos

Return the rolled burritos to the hot oven for about 10 minutes to cook through and add toast your tortilla and enjoy

If you are saving your burritos skip the cooking in the oven part and just place the sealed/rolled burritos in a freezer bag and store in the freezer
