Step 1
Preheat oven to 160°C (320°F).
Step 2
Place walnuts on a mesh strainer, wash and rinse raw walnuts.
Step 3
Spread walnuts in even layer on a baking tray. Bake in a preheated oven at 160°C (320°F) for 15 minutes or until golden brown. Set aside to cool.
Step 4
Add walnut and rice flour to a food processor, process the walnut until they are fine and evenly grounded.
Step 5
Add 200 g of water and 1 Tbsp oil, process walnut with high speed to a smooth paste.
Step 6
Add the rest of the water to the paste, and blend until it is completely smooth, blending time is about 2 minutes depending on the power of your appliance.
Step 7
Sieve the mixture with a fine strainer. Sieve again before pouring into a cooking pot.
Step 8
Mix in salt, brown sugar and evaporated milk, stir constantly and bring the mixture to boil on medium heat. Off the heat right after boiling.
Step 9
Walnut sweet soup is a great cream-based dessert to enjoy warm.
