Step 1

Preheat the oven to 180C/350F/gas mark 4.

Step 2

Put the sourdough on a baking tray, drizzle with olive oil and bake in the oven until golden.

Step 3

Put all the remaining ingredients apart from the feta into a bowl and mix gently.

Step 4

Just before you are about to serve the salad, put a heavy-based frying pan on a high heat.

Step 5

When it is really hot, add a touch of olive oil and then the feta, then toss it around until it is charred on the edges.

Step 6

Add the hot feta and toasted sourdough to the bowl, season, then give the salad a final mix before serving.
