Step 1
Preheat oven to 425 degrees F.

Clean chicken and pat dry with a paper towel. Add Italian seasoning, garlic powder, and salt and pepper to chicken and coat chicken on both sides. Roughly slice a red onion and set aside.
Step 3
Add olive oil to an oven safe pan. (I used a cast iron skillet) Heat oil over medium heat and add chicken thighs. Sear chicken on both sides until golden brown, about 3-5 minutes on each side. Remove from heat and add white wine and 2 tbsps of butter. Toss in red onions (make sure that they are submerged in the white wine and butter).
Step 4
Bake for 20-25 minutes, until chicken is cooked thoroughly.
