Jalapeño Cheddar Chicken is a delicious, spicy Instant Pot creamy chicken recipe. Made with jalapeños and chili powder, this recipe is mildly spicy but can be made even spicier with more jalapeños. Chicken and veggies come together with a creamy cheese sauce that can be served over rice, noodles, in burrito bowls, in tacos, or enchiladas.

Jalapeño Cheddar Chicken (Instant Pot Recipe)

lbs chicken tenders

onion, diced

Turn the Instant Pot to saute on high for 6 minutes. Melt 3 tablespoons of butter in the pot. Add chicken tenders and brown on each side for 2 minutes. Add jalapeños, onions, and garlic, toss with the chicken, and saute for the remaining 2 minutes.

Add the broth to the pot and deglaze, scraping any stuck pieces of food from the bottom. Add corn, scallions, heavy cream, chili powder, oregano, salt and pepper. Do not stir.

Seal the lid and set to pressure cook on high for 6 minutes. Let naturally release for 10 minutes, then quickly release the remaining pressure. Remove the chicken and set aside while completing the next 3 steps.

Remove the inner pot to a heat-proof surface and let cool for 2 minutes. When cooled, add the cheese 1 cup at a time, stirring between additions to melt the cheese *The sauce will be watery at this stage.

Melt the remaining 3 tablespoons of butter in the microwave. Whisk the flour into the butter to form a thick paste.

Put the inner pot back into the pressure cooker and set to saute on high for 6 minutes. Add the butter/flour paste to the pot and whisk until incorporated, about 1 minute. Stir the sauce occasionally while it simmers for the remaining 5 minutes, gently scraping the bottom to remove any cheese that may have stuck. You&#039;ll feel the sauce begin to thicken as it simmers.

Turn off the Instant Pot and add the chicken back to the pot along with the cilantro. Let rest for 5-10 minutes if desired to thicken the sauce further. There will be extra sauce for serving over rice, noodles, or to use as a dip for tortilla chips.

One Skillet Salmon with Lemon Orzo

salmon fillets

salt (divided)

tsp black pepper (divided)

tsp sweet paprika

garlic powder

olive oil

unsalted butter

yellow onion (finely chopped)

garlic

dry orzo pasta

thyme

baby spinach

juice from ½ lemon

Parmesan

black pepper (for servng)

chili flakes (for serving)

Get your prep done before you start cooking: Grate the Parmesan cheese, finely chop the onion and mince the garlic cloves. Pat the salmon fillets dry with a paper towel. Season both sides with garlic powder, sweet paprika and ½ teaspoon salt and pepper.

Heat oil and butter over medium high in a large nonstick pan or skillet. Add salmon fillets and sear, 3-4 minutes per side. Remove from skillet and set aside.Reduce heat to medium, add garlic and onion. Cook until soft and fragrant for about 2 minutes. Stir in thyme and the remaining salt and pepper. Add orzo and toast for 1 minute.

Pour in broth and bring to a boil. To maintain a simmer, reduce the heat to medium-low. Cook uncovered while stirring occasionally to prevent the orzo from sticking, until almost al dente and most of the liquid is absorbed, about 8 minutes.

Add spinach, stir and simmer until wilted for about 2 minutes. Stir in lemon juice and Parmesan. Add more broth, if needed. Taste and adjust salt.

Return salmon to the skillet and simmer for 2-3 minutes, or until the salmon is heated through.

serving

Top with freshly ground black pepper and chili flakes. Enjoy!

Creamy Instant Pot Fettuccine Alfredo is made in 25 minutes with 7 simple ingredients and in 1 pot. Add rotisserie or cubed chicken or serve without as a comforting, creamy pasta dinner.

Instant Pot Fettuccine Alfredo

tbsp butter

shallot (diced)

garlic (minced)

fettuccine

broth (or water)

Parmigiano Reggiano (sub with Parmesan)

parsley (optional)

Set the Instant Pot to saute for 3 minutes. Add the butter to melt and when the pot starts counting down add the diced shallot. Add minced garlic with 30 seconds remaining.

Turn off saute and pour in the broth. Deglaze the bottom of the pot to ensure pieces of food are not stuck to the bottom.

Break the fettuccine noodles in half and add to the pot. Pour in heavy cream, pressing down on the pasta to cover. Add salt and pepper. Seal the lid and set to pressure cook on high for 5 minutes. For a more al dente pasta, pressure cook for 3 minutes. *You can also cook for the amount of time you normally cook fettuccine if you have a specific tenderness that you like, without affecting the taste of the sauce.

Complete a controlled quick release of the steam when finished (lightly press on the steam release valve in short bursts until all steam is released to avoid heavy cream spraying out and making a mess).

Remove the inner pot to another surface. Wait 3 minutes, then add the cheese 1 cup at a time, mixing to melt and incorporate into the sauce between cups. Season with additional salt and pepper if desired. Serve immediately, garnished with parsley.

With such a short amount of time to prepare, you can make an awesome and delicious dish, it is creamy but not over the top and the flavors are really in there!

I added 16oz of fresh mushrooms. I reduced the broth to 1 cup, layered like the recipe states and put the raw mushrooms on last. Closed the lid and cooked like the recipe states.

I made this for dinner tonight and it was amazing! I did pressure cook for 6 minutes and I’m glad I did because my noodles were still a little adente which is good for us! After taking the lid off everything looked way too liquidy but after adding the freshly grated cheese it turned out perfect! Mixed in some rotisserie chicken and served with a salad. Yum!

This was easy to make and delicious, but when the cooking time was up and we quick-released it, about 30 seconds into the decompression, instead of steam, it was cream blowing out of the valve.  We had a kitchen cabinet, refrigerator, and floor covered in heavy cream before it was contained...
