Coconut Lemon Bars

(1 stick) unsalted butter, softened

sugar

all-purpose flour

baking powder

coconut

almonds

vanilla extract

(12 oz) jar lemon curd

Preheat oven to 375˚F. In a large bowl cream butter and sugar with electric mixer. Sift in flour and baking soda. Blend until just combined. Receive 1/2 cup of this crust mixture. Press majority of mixture into bottom of greased 9”x9” baking dish. Level with bottom of flat glass or mug. Bake for 8-10 minutes.

While crust is pre-baking combine reserved crust mixture with coconut, almonds, and vanilla in blender or food processor.

Spread lemon curd on top of crust while still hot. Level with back of spoon. Sprinkle coconut mixture on top.

Bake for 18-20 minutes or until edges of crust are just beginning to brown. Allow to cool for at least 30 minutes before placing in fridge to cool for another 2 hours. Then slice into squares and serve.

Pancake Mix Banana Bread

pancake and baking mix

Preheat oven to 350˚F. Place bananas, sugar, milk, oil, vanilla and eggs in blender or food processor. Pulse until uniform in color and texture. Pour mixture into a large bowl, then add in Bisquick. Stir until batter forms, then fold in pecans.

Pour batter into greased 9”x5” loaf pan. Bake for 50-55 minutes or until knife inserted in center of loaf comes out clean. Allow to cool for 1 hour before removing from pan and slicing.

Apple Hurricane Cake

In a medium saucepan combine egg, sugar, and cornstarch. Then stir in milk. Heat over medium-low until frothy, whisking constantly. Once it begins to bubble cook for 5-10 minutes, still whisking. Then remove from heat then add in vanilla extract and stir well. Set aside.

For the topping:

Preheat oven to 350˚F. Peel and core apples. Cut into large, diced pieces. Toss apple pieces in a medium bowl along with lemon juice.

In a large bowl combine granulated sugar, salt, and eggs. Use an electric mixer to blend until pale and frothy. Add in vanilla extract and milk and mix together. Sift flour and baking powder together into the wet ingredients and blend until just combined, scraping down the sides of the bowl as you go.

Fold apples into batter and pour into a 9” tart or pie pan lined with parchment paper. Scoop custard topping into a Ziploc bag and cut tip of one bottom corner off. Or use icing bag. Starting in the middle pipe a swirl of custard going outward. Repeat pattern until all custard is used up.

Bake for 30 minutes or until top begins to turn golden brown. Cover with foil part way through cooking if it browns too quickly. Allow to cool for at least 1 hour at room temperature before removing from pan. Gently cover the top with a flat plate or cookie sheet, then turn upside down. Remove paper and then return to cake right side up. Sprinkle lightly with sifted powdered sugar and cut into 8-12 pieces.

For the cake:

Amish Baked Custard

(14 oz) can sweetened condensed milk

water

nutmeg

Preheat oven to 325°F. Combine condensed milk and hot water in a large glass or metal bowl.

In a separate bowl beat eggs until light in color and fluffy in texture. Pour a bit of the hot milk mixture into eggs to temper, then combine them fully. Stir in vanilla and salt. Pour into ramekins and place on baking pan with high sides. Or use a 2-quart baking dish instead.

Place pan in oven and fill with half inch of water. Bake for 1 hour or until a knife inserted in center comes out clean. If using larger baking dish bake for 1 hour 40 minutes.

Allow custard to cool for 1 hour. Sprinkle with nutmeg and serve warm or refrigerate to serve chilled.
