These flourless peanut butter banana oatmeal cookies require just 3 basic ingredients to make then you can have some fun with add-ins like chocolate chips! These cookies are a wholesome treat you can enjoy anytime of the day as a healthy way to satisfy your sweet tooth.

Flourless Peanut Butter Banana Oatmeal Cookies

quick oats (225 g)

medium ripe bananas, mashed (285 g, approx. 1.25 cups)

natural peanut butter (120 g)

maple syrup

tsp sea salt

tsp pure vanilla extract

(90 g) dairy-free chocolate chips chocolate

Mash the bananas in a bowl with a fork until they form a thick, smooth paste.

Add the rest of the ingredients and mix until everything is combined into a dough.

Drop 16 spoonfuls onto a cookie sheet, shaping each spoonful into a cookie shape. The cookies will not change shape during baking, so make sure you create the cookie shape you want beforehand. You can make them larger and flatter or keep them as more of a haystack-style.

Bake for 15 minutes. They should be firm and slightly browned when done.

Let cool completely before storing. Store in a sealed container at room temperature for up to 3 days, in the fridge for up to 1 week or freeze for up to 3 months.

These are super easy to make and tasty. I like the simplicity of them and you can just make a few, mine made 15. I added the vanilla, honey and raisins. They are great for  a ‘grab and go’ snack for the grandkids and make a nice addition to breakfast or when you just want a sweet little something. 

Super easy to whip up. I added carob chips- next time I’ll try sultanas &amp; riper bananas…. They weren’t quite as sweet as I’d like.

Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.

In a large bowl, combine mashed banana, peanut butter, vanilla extract, cinnamon, and salt. Mix together. Add the rolled oats and mix together until combined. Then, fold in the chocolate chips.

Scoop the cookie dough into 8 balls. Use clean hands or a spoon to flatten the dough into cookies. They do not spread in the oven, so form them before baking.

Bake for 15 minutes. Remove from the oven and let cool for 5 minutes. Enjoy!

I baked these fantastic cookies yesterday! They have been appreciated from all my guests, vegan and not vegan. I kept them in the oven 20 minutes and the dough was perfect! Surely I will make them again! Easy, quick and delicious!

I made these before with peanut butter and they were so good! I was wondering if they would work with almond butter instead of pb?

Preheat oven to 350 degrees. Line a baking sheet with a baking mat or parchment paper.

Using a wooden spoon, mix together the peanut butter, white sugar and egg until smooth.

Form dough into heaping tablespoons (about 3/4 inch). Then roll the dough ball in a small bowl of sugar, if desired, to coat the outside. Place on the baking sheet at least 2 inches apart, and then use a fork to flatten and form a cross pattern.

Bake for 10-15 minutes, until the cookies are just slightly browned on the bottom. Be careful not to over-bake. Remove and let cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.

Healthy Banana Oatmeal Chocolate Chip Cookies

oats (large oats)

semisweet chocolate chips (see note)

Set the oven rack to the upper-middle position. Then preheat the oven to 350°F (177°C).

Line a baking sheet with parchment paper or a nonstick baking mat and set aside.

Peel the bananas and place on a large plate. Using a fork, mash them until smooth with no more lumps.

Add the oats and mashed bananas to a medium-size bowl and mix well. If the mixture seems too wet, mix in a few more tablespoons of oats.

Add the chocolate chips and stir to combine.

My 3 ingredient pumpkin oat cookies are perfect for snacking or breakfasts on the move. They are vegan, oil-free, gluten-free, 31 calories each (for the basic version), and endlessly customizable with a variety of different add-ins.

Preheat

Preheat the oven to 350F(180C). Line a large baking sheet with parchment paper.

Process

Process the oats in a food processor or high-speed blender until they resemble either a rough or fine flour.

Stir

In a medium mixing bowl, stir the pumpkin puree, water, coconut sugar, and (optional) salt until blended (if adding optional extracts, zests, or spices, add them now).

Add the ground oats to the bowl (if adding optional extras such as chocolate, nuts, or dried fruit, add now). Stir until blended into a soft, thick dough.

Scoop

Using a small cookie scoop or rounded tablespoon, scoop small mounds of dough onto the prepared baking sheet. Using fingertip, flatten the dough slightly into a round shape.

Bake

Bake in the preheated oven for 10 to 12 minutes until golden browned at the edges and the dough appears dry.

Cool

Transfer the cookies to a wire cooling rack. Cool for at least 5 minutes before eating.

I love these cookies! Easy to whip up. I admit I add chocolate chips or raisins for extra sweetness, it comes out great for a simple treat.
