5 green smartpoints

A fantastic stir-fry as delicious as your favorite takeout but made healthier. Why? Because I lightened up the sauce using a smaller amount of sweetener compared to most teriyaki sauces. I used honey and Stevia and low-carb zoodles instead of pasta noodles. This dish is protein-rich and packed with fiber. Each serving has 291 calories and 5 grams of fat.

Skinny Teriyaki Chicken and Zoodles Stir-Fry

cornstarch

water

soy sauce

honey

Truvia (Stevia)

onions, (chopped)

chicken

olive oil

sesame seeds (for topping (optional))

In a small bowl, whisk together cornstarch with 2 tablespoons water; set aside.

In a small saucepan over medium heat, add soy sauce, ¼ cup water, honey, Truvia, garlic, and ginger. Bring it to a simmer. Stir in cornstarch mixture and mix until thickened, about 2 minutes; Pour into a small bowl and place in the freezer to chill. Set a timer for 30 minutes so you don’t forget it. Remove from the freezer and set aside.

In a large Ziploc plastic bag or large bowl, combine ¼ cup chilled soy sauce mixture and chicken; marinate for at least 30 minutes or overnight, turning the plastic bag.

In the meantime, make the zucchini noodles (zoodles). Place zoodles in a microwave-safe bowl and cook for about 5-6 minutes, to soften. (I use this step so you don’t need a lot of oil when cooking with chicken).

Add onions to a small microwave bowl and cook in the microwave for 2 minutes, to soften.

Heat olive oil in a large, nonstick pan over medium heat. Add chicken, including marinade from plastic bag and onions. Cook until golden brown and cooked through, about 3-4 minutes.

Stir in zoodles and reserved soy sauce mixture until well combined, about 2 minutes. If desired,  sprinkle all over stir fry with 1 teaspoon sesame seeds.

Warning…These are highly addictive!!! You’ll probably end up making them all the time. I know I do! Such a fantastic way to jazz up fries. They’re baked in the oven with garlic, a little olive oil and once baked, sprinkled with Parmesan cheese and a little garlic powder. Each serving has 172 calories and 6 grams of fat. You could easily cut this recipe in half if you don’t need 5 servings.

Baked Garlic Parmesan Fries

Preheat oven to 450 degrees. Line 1 baking sheet with foil and coat baking sheet with cooking spray.

Cut the potatoes lengthwise in half and in half again. Cut each piece into ¼-½ inch thick strips. Place on the baking sheet and toss with the olive oil and garlic. Use your hands to evenly coat. Spread the potatoes evenly over the entire pan. Season with a little salt and black pepper. Bake uncovered in the center of the oven until tender crisp and golden brown, about 20-25 minutes on each side. Baking time will vary depending on how thick your pieces are and your oven. Set your timer for 20 minutes and check.

Remove from oven and sprinkle all over with Parmesan cheese and a little garlic powder.  Add a little more salt and pepper, if desired.

You can give this timeless classic salad a new look every time you make it by choosing different greens, meats, and dressings. My version is loaded with lean protein and dressed with a yummy skinny ranch dressing. Each huge salad, including dressing, has 265 calories and 9 grams of fat. Makes a very satisfying lunch or main course dinner!

The Best Skinny Ranch Dressing or Skinny Thousand Island Dressing

romaine lettuce, (chopped)

(~1½ ounces) ham, (chopped

(~1½ ounces) roasted turkey breast, (chopped or julienne )

egg,

grape or cherry tomatoes, (halved)

avocado,

Prepare dressing and refrigerate. 

To make 1 main course salad: Place 4 cups of lettuce on a dinner size plate. Top salad with ham, turkey, egg, tomato, and avocado, if desired.

Drizzle 2 tablespoons of salad dressing all over the salad. Add more if desired. 

This recipe can be doubled, tripled, and so on.     

A yummy way to eat a lot of lean protein and veggies!
