7 minute frosting

There is nothing better than celebrating birthday by devouring a slice of our Mom’s rich, chocolate cake topped with this fluffy, gooey, marshmallow-y frosting.  This special cake and frosting combination has become so intertwined with family birthdays. My hope is that this special recipe will make its way into your family’s birthday celebrations too. :-)

My Mom’s 7-Minute Frosting

Set a heatproof bowl over a saucepan of simmering water.

Add the sugar, corn syrup, egg whites, and a 1/4 cup of water to the bowl.

Cook over medium heat, stirring frequently, until the mixture reaches 160 degrees.

Remove the bowl from the stove and fit it into stand mixer. Set up the whisk attachment.

Beat the mixture on high speed until glossy and fluffy, about 5 minutes.

Beat in the vanilla extract, and use immediately.

This old-fashioned 7 minute frosting recipe is light, delicious, and easy to make. A bright white frosting that&#039;s perfect for cakes, cupcakes, and more.

7 Minute Frosting

Wipe your mixer bowl and whisks down with lemon juice or vinegar.

Place egg whites, cream of tartar, and sugar into the bowl of a stand mixer, whisk until combined.

Place bowl over a pot with 1-2&quot; of simmering water and stir constantly with a whisk until the mixture is hot, no longer grainy to the touch, and reads 160F on a candy thermometer (about 2-3 mins).

Transfer bowl to your stand mixer and whip on med-high until the meringue is stiff (about 5-7 minutes).

Slowly stream in vanilla while the meringue is whipping. Taste and add more flavoring if desired*

Make a double boiler by choosing a heat-safe metal or glass mixing bowl that can sit on top of a saucepan. Place 2 inches of water in the bottom of the saucepan. The bottom of the bowl should not touch the water. Bring the water in the saucepan to a boil. Once boiling, reduce the heat to medium or medium-low and leave it at a simmer.

Add the sugar, water, egg whites, cream of tartar and salt to the mixing bowl. Using an electric mixer, beat the mixture for 30 seconds on low speed until combined.

Place the mixing bowl over the simmering water and cook while mixing with the electric mixer on high speed for 7 minutes or until the frosting forms stiff peaks.

Remove the bowl from the heat and mix in the vanilla. Mix for another 2-3 minutes until the consistency is spreadable.

Working somewhat quickly, frost the top and sides of 1 angel food cake, or two 8 or 9-inch layer cakes. The frosting will set as it cools. Enjoy!

Choose a saucepan and sit a heat proof bowl on top. Fill the pan halfway up with water (be sure the water is not so high it is touching the bottom of the bowl) and bring to a simmer.  In the bowl, add the egg whites &amp; sugar and stir gently with a whisk until the mixture is warm and the sugar has dissolved. Remove from the heat and whisk at a high speed until stiff and glossy. (About 7 minutes). Once stiff, fold in the vanilla and ½ of the coconut.

Put a cooled cake layer, cut side facing up on a plate. Using a spatula evenly spread the lemon curd on top of the cake then a thin layer of frosting.
