Just a little bit of Indian pickle makes an amazing difference to the flavour of achari chicken curry

achari chicken curry - Indian hotel style

chilies

Indian hotel curry gravy

boneless, skinless chicken thighs

garlic pickle (-

chicken stock (- if needed.)

Pre-heat a small skillet over medium-low heat.

Add the spices except the kashmiri chilies to the skillet.

Toast, shaking the pan, until they just start to get fragrant. This should take a two or three minutes. Add the kashmiri chilies and toast until the chilies start to colour. This happens fast so pay attention.

Let cool and grind to a powder with little chunks in it. Not super fine but not coarse either. Fine with little coarse bits in it. I should take a picture. I like a coffee grinder for this. The old ones with the blade work well. Not the best for coffee. Great for spices.

You won&#039;t need all of it so transfer it to a jar with a tight fitting lid and store in a cool, dark place so it&#039;s ready for next time.

Make the achari

Measure out your spice mix. Prep your chicken. Measure out a cup (237 ml) of Indian hotel curry gravy. Cut up your green chilies if using.

Make sure you have everything ready to go.

Do your prep

Heat the oil in a medium sized frying pan until the oil just starts to shimmer.

Stir in  the garlic ginger paste. Gently fry until the garlic ginger paste stops sputtering. This can get a little messy.

Turn your heat down to medium low and add your spice mix. Cook for about 30 seconds. You want to fry your spices in the oil. Don&#039;t skimp on the oil. Bad things happen if the spices stick and burn.

Add the green chilies if you are using them. Cook another 30 seconds or so.

Add the Indian hotel curry gravy. Stir it really well to get the oil to combine with the curry gravy. You want everything mixed together at this point. Bring  to a simmer.

Add the chicken thigh pieces in a single layer. Nestle them down into the sauce. Cover and ccok about 5 minutes. Remove the cover, flip the chicken and recover. Cook until the chicken is done. Use an instant read thermometer if you have one. You are shooting for an internal temperature of 160F. It will get to 170F as the curry finishes cooking.

Add the garlic pickle (or whatever pickle you decide to use) and the optional naga pickle if using. Stir well to combine.

Look at the consistency. You have a decision to make. If the chicken threw a lot of liquid the sauce might be right. If not, add a tablespoon or two of chicken stock and mix it in. Look again.  If you are happy with it, cover and simmer for 2 minutes. If it&#039;s still too thick, add a bit morestock. I&#039;ve never added more than a 1/4 cup.

Achari chicken curry is great with rice and a chickpea curry if you are feeling really motivated.

Make the achari chicken curry

Achari chicken or achari murgh is a bold and spicy chicken curry made in Indian pickling spices.

Achari Chicken

chicken,

mustard oil or vegetable oil

onion,

tbsp ginger and garlic, minced

red tomatoes, pureed tomato puree

fennel seeds

tsp mustard seeds

tsp nigella seeds

tsp fenugreek seeds

coriander seeds

red chillies

bay leaf

tsp Kashmiri chilli powder

turmeric powder

salt,

cilantro,

Crush the coriander and fennel seeds coarsely in a mortar and pestle or a spice grinder.

Preparation 

Turn on your instant pot to saute (normal), add the oil and let it heat up. Add the fenugreek seeds and when they turn dark brown (a few seconds), add the rest of the whole spices. Let them sizzle in the hot oil for 10 seconds.

Add the chopped onions and fry until they turn golden brown (5 minutes).

Tip in the ginger garlic paste, Kashmiri red chilli and turmeric powders. Saute for about 3 minutes adding splashes of water to prevent the masala from sticking to the pot.

Add the tomato puree, salt and chicken and cook until the masala is well roasted and the oil separates (10 minutes). Achari masala is done.

Cancel the saute mode and switch on the pressure cooking (manual in some models) mode. Secure the lid, seal the vent and set the timer to 4 minutes.

Once the timer beeps, release the pressure after 5 minutes. Chicken achari curry is ready. Garnish with chopped cilantro and serve hot with naan and onion rings.

Instant Pot Method

Cook the chicken in a heavy bottomed deep pot like a wok or karahi , not a shallow pan.

Follow the steps until step 4, then cover the pot, lower the heat and simmer for half an hour to 45 minutes. If you find the gravy is getting dry, add a few splashes of water to keep it moist. The final dish has a thick, not thin gravy, but you still need a little water to cook the chicken.

Do keep the heat low after step 4 and cover the pot to seal in the flavor. The chicken will cook in its own juices and you will get a moist and succulent chicken curry in the end.

Stove-top Method

This is an easy, fuss-free, yet flavorful recipe for Achari Chicken, or Indian and Pakistani chicken curry made with pickling spices.

Easy Achari Chicken

neutral oil

tsp fenugreek seeds (methi dana)

fennel seeds (saunf)

tsp nigella seeds (kalonji)

tsp cumin seeds (zeera)

onion

garlic

1- inch ginger (crushed)

lb bone-in cut up, skinless chicken pieces ((preferably

tsp kosher salt (divided)

tomatoes (I use Roma) (finely chopped)

green chili peppers (such as Serrano

coriander powder

tsp red chili powder (or to taste)

plain, whole milk yogurt (See Note 2) (whisked)

green chili peppers

tsp lemon juice (or to taste)

cilantro (chopped)

tbsp julienned ginger (optional, for garnish)

Heat a large, heavy-bottomed pan over medium-high heat. Once hot, heat the oil and add the fenugreek seeds, fennel seeds, nigella seeds, and cumin seeds. The seeds will begin to sizzle. Immediately add the onions and sauté until they are lightly golden (~10-12 min). If needed, deglaze the pan with 2 tbsp of water. Once the water dries up, add the garlic and ginger and sauté for a minute, until aromatic.

Add the chicken and 1/2 tsp salt and sauté for 5 minutes, until it changes color.  Add the tomatoes, green chili pepper, coriander powder, red chili powder, turmeric powder, and remaining salt (1 ½ tsp). Continue to sauté until the tomatoes soften (~2-3 min). Add 1/3 cup water (the water should cover about 1/3 of the chicken) and bring to a boil.

Lower the heat to a simmer (low-medium), cover, and allow the chicken to cook for 20-25 minutes (depending on size), stirring once in between.

Uncover and raise the heat to high. Sauté for 4-5 minutes to reduce excess liquid. You will notice the chicken taking on a glossy appearance as the oil starts to separate, but it’ll still have plenty of curry.

Lower the heat to low-medium and stir in the whisked yogurt. Add the whole green chili peppers. Gently sauté for 2-3 minutes until well incorporated and you can see the oil separated from the curry. Taste and adjust salt, if needed. (I usually need another 1/8 tsp.)

Turn off the heat. Add lemon juice and stir to mix. Garnish with cilantro and julienned ginger. Serve hot with naan, roti, paratha, or other bread.
