Instant Pot Chicken Adobo Recipe

Boneless Chicken Thighs (Fresh

Onion Sliced

Cloves Garlic Minced

Tbsp soy sauce

Tbsp White Vinegar

Tbsp Sugar

tsp Red Chili Flakes

Cup Chicken Broth

Cup Water

tbsp chopped cilantro (set aside for garnish)

tbsp chopped scallions (set aside for garnish)

Salt and Pepper to taste

Salt and Pepper the chicken Put chicken in Instant Pot. I used FROZEN chicken for this recipe but you can use fresh chicken and the cook time is the same. Top chicken with the sliced onion. Mix together in a bowl soy sauce, white vinegar, sugar, chili flakes garlic and chicken broth (I use the chicken base) and water. Add all the liquid to the Instant Pot.

Put the lid on the Instant Pot and turn valve to SEAL. Press Poultry button and set time to 11 Minutes. When cooking is completed release pressure of Instant Pot by opening the valve. Remove chicken from Instant Pot and set aside. Press cancel on Instant Pot. The press the SAUTE button and set to the High setting. Let sauce reduce until it becomes darker in color. This takes about 15 Minutes. Then Put chicken back in pot with reduced sauce to warm it up a bit. Then serve chicken and spoon sauce over it and enjoy. I serve the chicken over rice.

Chicken Adobo

chicken thighs

white vinegar (see notes)

soy sauce

garlic

bay leaves

black peppercorns

maple syrup or use brown sugar or coconut sugar

Fresno chili pepper

green onions, sliced for garnish

In a shallow bowl mix together vinegar, soy sauce, garlic, bay leaves, peppercorns and maple syrup. Add chicken and let marinate for 1-3 hours.

Drain the chicken, reserving the marinade. Heat up a pan with just enough oil to coat the bottom., brown the chicken in the hot pan about 3 minutes per side. 

Add the reserve marinade back into the pan. If using a chili pepper add that in. Simmer the chicken in marinade uncovered until it almost completely reduces, about 15-20 minutes, more if needed. The chicken will be dark and glazed.

This Filipino Chicken Adobo recipe has tender, juicy chicken cooked in a tangy, intensely-flavorful sauce that is quick to throw together and delicious served over white fluffy rice.

Filipino Chicken Adobo

rice vinegar ((*see notes))

neutral oil,

yellow onion, (thinly sliced)

bay leaves (preferably fresh)

green onions, (thinly sliced)

white rice (for serving)

In a large bowl, combine the vinegar, soy sauce, and peppercorns. Add the chicken thighs and marinate for at least 20 minutes, or up to overnight.

Heat 1 tablespoon oil over high heat in a large skillet or pot. Remove chicken from the marinade allowing most of the marinade to drip back into the bowl (reserve the marinade). Place the chicken, smooth side down, in the hot pan. Cook undisturbed for 2 to 3 minutes, or until just a bit brown and golden. Flip and cook for only 2 more minutes—do not cook through. Transfer chicken to a large plate.

Reduce heat to medium-low and add the remaining 1 tablespoon oil to the skillet. Add the onions and garlic and cook until garlic is fragrant and slightly brown, about 2 minutes. (The onions do not need to be brown).

Add the reserved marinade, bay leaves and sugar and bring to a rolling boil, scraping up any browned bits that may have stuck to the bottom of the pan. Once boiling, lower the heat to medium and simmer for 3-4 minutes.

Nestle in the chicken thighs, smooth side down. Lower heat to a simmer, and cook, uncovered, for 10 minutes. Flip the chicken thighs and continue to simmer, occasionally spooning sauce over the top of the thighs, for 10 to 15 minutes, or until sauce has reduced by at least half.

At this point, if the sauce doesn&#39;t seem thick enough, remove the chicken to a plate and continue to cook the sauce until it reduces to your desired consistency. I like it a bit glaze-y but not so thick that I lose too much sauce. Return chicken back to the skillet to warm slightly, if necessary.

Serve immediately with fluffy white rice, passing around extra adobo sauce at the table.

Mexican Chicken Adobo

chicken legs

boneless (skinless chicken thighs)

olive oil (divided)

Roma tomatoes (roughly chopped)

white onion (roughly chopped)

garlic (peeled)

guajillo chiles

ancho chile

dried chipotle chile

chicken broth (divided)

apple cider vinegar

salt

coriander powder

cumin

thyme

Mexican oregano

cloves

Heat a large skillet over medium-high heat with 1 tablespoon olive oil. Add the tomatoes, onion and garlic to the pan and stir and cook until the tomatoes and onions start to char.

Add the dried chiles and 2 cups of the chicken broth and stir and cook for 10 minutes.

Remove the pan from the heat and let it cool for five minutes. Add it all to a blender along with the remaining cup of broth, vinegar, salt, coriander, cumin, thyme, oregano and cloves and blend until smooth. Set aside.

Heat a large Dutch oven or soup pot over medium heat. Add remaining 1 tablespoon oil. Add the chicken in an even layer and cook for 3-4 minutes on each side, turning often to prevent burning.

Once chicken is browned on all sides, add the sauce into the pot with the chicken and add the bay leaves.

Stir to combine and let it come to a boil. Then lower the heat to low-medium, cover it with an offset lid and let it simmer for 45-60 minutes, stirring occasionally as needed.

Remove the bay leaves and serve chicken with Mexican rice and freshly chopped cilantro.
