The Ultimate Grilled Cheese Sandwich

brioche bread, ¾-1” thick ((or Texas toast))

butter

sharp cheddar cheese ((or white cheddar))

Gruyere cheese ((or Swiss, gouda))

Colby Jack cheese ((or Provolone, Havarti, Muenster))

tomato slices

pickles

mustard

Heat a griddle or pan over medium heat. (You don’t want the heat too high, or else the bread will brown before the cheese can melt. If in doubt, go to medium-low and slowly increase the heat.)

Place 2 or 3 cheese slices on a piece of brioche, along with any additional desired sandwich fillings. Add another piece of brioche on top to create a sandwich. Repeat to assemble as many sandwiches as desired.

Melt butter in microwave or in a small saucepan. Brush melted butter onto one side of each sandwich.

Place sandwiches buttered side down onto griddle over medium heat, cooking until golden brown, about 3 minutes. Before flipping, brush melted butter on the top side of each sandwich. Flip and cook another 3 minutes, until cheese melts and sandwich is browned and crispy. (Cook 5-6 minutes total.)

Slice sandwiches if desired, serve hot, and enjoy!

Yields 2 grilled cheese sandwiches.

The easiest-ever 3-ingredient homemade tomato soup + how to make the perfect grilled cheese! This is one of my FAVORITE lightened-up weeknight dinners that’s both nourishing & comforting, and quick enough to make in 30 minutes. 

First I’m sharing how to make tomato soup with canned tomatoes—which is way simpler (and often tastier!) than using fresh tomatoes. Just simmer those crushed tomatoes with sautéed onion and broth, then blend!

And I like to serve that easy, creamy tomato soup with my ULTIMATE 3-cheese grilled cheese sandwich: with cheddar, Gruyère, and Swiss cheese on brioche bread! Of course, you can use more or less of whatever cheeses you want to make YOUR ultimate grilled cheese. 

For me, this meal captures so much of what I’ve learned on my own health journey, and what I hope to communicate on this channel: Some of the best things we can do for our health are reduce our stress around food, give ourselves permission to enjoy food, let go of self-judgment, and lighten up on ourselves! 3-Ingredient Tomato Soup + The Perfect Grilled Cheese

This Sourdough Grilled Cheese Sandwich is the grown up version of your childhood favorite. My recipe takes the classic grilled cheese to the next level with two types of cheese, lots fresh herbs, and spicy Calabrian chili peppers for the perfect cheesy, herby, spicy bite.

Grown Up Grilled Cheese

oz sharp cheddar cheese, shredded

oz muenster or Monterrey jack cheese, shredded

basil leaves, chopped

parley leaves, chopped

green onions, thinly sliced

sourdough bread

chopped Calabrian chili peppers, plus

unsalted butter, plus more if needed

Add the shredded cheeses and herbs to a medium sized mixing bowl. Use your fingers or a spoon to toss until the herbs and cheese are well combined.

Assemble the sandwiches

 Spread your desired amount of chopped Calabrian chili peppers on the inside of each slice of bread. Top one slice with half of the cheese and herb mixture and then place the remaining slice of bread (chili pepper side down) on top. Repeat the process to make the second sandwich.

Heat a large cast iron skillet over medium heat. Once hot add the unsalted butter.

Place your sandwiches in the skillet and cook for 2-3 minutes, pressing the sandwiches down slightly, until golden brown and crisp. Flip and cook on the other side for an additional 1-3 minutes until golden. If the bread starts to brown too quickly turn down the heat. This will help to avoid any dark brown or black spots and ensure you have a golden brown sandwich with the cheese fully melted.

Once the sandwiches are golden and the cheese is melted, remove them from the pan. Slice in half and serve.

This was really delicious!  Peppers were very spicy, so I'll go a bit easier on those next time.
