Got a brown banana hanging around? Fan of freshly baked banana bread but don&#039;t want a big loaf lying around to tempt you? This mini banana bread is a super easy one bowl recipe and there’s no creaming of butter and sugar necessary. Just mix together a few basic pantry ingredients, pop the cake into your air fryer (or oven if it&#039;s already on) and you’ll be enjoying a delicious slice of healthy banana bread in around just 30 minutes.

Really Easy Air Fryer Banana Bread (Mini Loaf!)

banana (small to medium (about ⅓ cup), mashed – the riper the better)

brown sugar (I add 2-3 tablespoons depending on my mood!)

milk (Any milk works, including non dairy

all-purpose flour

baking soda

salt

cinnamon or nutmeg ((optional))

chocolate

Line pan and spray with oil.

Line a very small ovenproof baking pan, glass dish or mini loaf pan (I&#39;ve used 5 sq inches and also a 5x3 inch mini metal loaf pan) with baking paper and trim. Spray with a little oil.

Pre-heat oven.

Whisk together mashed banana, sugar, oil and milk.

In a small bowl, whisk the egg into the mashed banana. Then whisk in the sugar, oil, and milk.

Add flour and baking soda and mix-ins.

Add the flour and baking soda and salt and mix until just combined. Add a drizzle more milk if the mixture seems at all dry (certain flours such as whole wheat and coconut are more absorbent than all purpose flour). Fold in any mix-ins e.g. chocolate chips, nuts.

Pour batter into pan and bake for about 30 minutes.

Pour the batter into the prepared pan and bake in your oven or air fryer for 25 to 35 minutes or until a skewer poked into the bottom of the cake comes out clean. A little bit of sticky-ness is fine. For me it takes 30 to 35 minutes in my air fryer and 25 minutes in my oven.

Let cool.

Let cool for 10 minutes in the tin/dish, then transfer to a wire rack to cool.

This is a pretty good result for such a simple and quick recipe.  I had trouble incorporating the flour without over mixing. Poured it into 2 x rectangular silicone moulds, each have 360mL capacity. They were only half full but that was about right given the rise. Cooked for 20 mins then turned over as advised. I would line the silicone moulds next time as Helen suggests. 

Forgot to put in the bicarbonate but I really don't think it needs it (used self raising flour). Happy with the result, this recipe is a keeper.

My mouth is so busy eating, that I don’t even want to talk! This is the absolute most light, moist, delicious and tasty banana bread I’ve ever made in an air fryer, and just ever. I add whatever extras I want and it always comes out fabulous.

Baked in a Cosori Dual Blaze: 320°F for 25 min.
My only problem was I over-mixed it.

You mentioned you liked it sweeter.  So would I.
Will probably double the sugar next time.

Very easy to make and so easy to modify. Results were amazing and moist banana bread. Thanks for the recipe.

Just made it and, although tasty overall, just as other comments mentioned: there's something wrong either with the measurements or with the temperature. I followed the recipe to the letter (oven) but after 30 mins had to increase the temp and bake it for another 25 mins. And still it came out flat, dense and chewy. Was hoping for a nice fluffy banana bread but unfortunately this recipe doesn't work.

Fabulous. Just cooked it . Phillips XL airfrier, 25 mins at 180. Added half a grated apple and quater cup coconut and raisins. Thanks for your recipe. I’ll be making it often!!!
