sour cream

sugar (if you like a sweeter cornbread)

eggs (beaten)

corn kernels

Grease an 8 inch round cake pan and set aside.

Mix together the butter, sour cream and add sugar.

Add in the eggs, beating in completely.

Stir in the box of Jiffy mix. Mix now until the ingredients are completely incorporated.

Spread the mixture out in the pan in an even layer.

If needed, preheat your air fryer to 320 °F. Bake for 17-20 minutes until golden brown and baked through. You MUST check the very middle with a toothpick and see if it comes out clean! The middle is where it cooks last!

5 Stars! They turned out perfect! I've been looking for a good air fryer Jiffy corn muffin mix recipe for months. They would always turn out dry and crumbley, almost impossible to put butter on them. They would also stick to the muffin pan or individual papers, leaving half of it stuck in there. I followed your recipe exactly as it was written and my corn muffins couldn't have turned out any better! They had a good density to them and the right amount of moisture. They came right of out of the pan without issue and didn't lose shape or fall apart! My family agreed they were the best corn muffins I've made yet! Thanks for sharing the recipe!

Quick Air Fryer Cornbread Recipe

unsalted butter (melted)

all-purpose flour

yellow cornmeal

sugar

baking powder

baking soda

buttermilk

eggs

Grease a baking dish or cast iron pan with butter to prevent sticking.

In a large bowl, mix together the flour, cornmeal, sugar, baking powder, baking soda, and salt. Create a well in the center, then add the buttermilk, eggs, and melted butter. Stir until just combined, being careful not to overmix.

Pour the batter into your prepared baking dish, spreading it out evenly. Place the dish in your preheated air fryer and bake at 180ºC (350°F) for 10-12 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Let the cornbread cool in the pan for about 10 minutes before slicing and serving.
