Air Fryer Quesadillas are a super quick and easy dinner option for busy weeknights.  Stick with the classic refried beans and cheese, or choose your own filling combination.  The air fryer makes the tortilla perfectly crisp and the cheese melted to perfection.   

Air Fryer Quesadillas

Flour Tortillas

tbsp Refried Beans,

Cheese,

Guacamole

Sour Cream

Greek Yoghurt

Place tortilla on a flat surface, then spread...

Place tortilla on a flat surface, then spread refried beans over half of the tortilla.  Sprinkle cheese on top of the beans, then fold the tortilla in half.  Repeat with the remaining tortilla.  

Place the tortillas in the air fryer basket...

Place the tortillas in the air fryer basket and cook on 180C / 350F for 8 minutes, or until the quesadillas are crisp and golden and the cheese is melted, flipping halfway.  You'll want to check on your quesadillas in the first few minutes of cooking and if the tortilla has lifted slightly away from the fillings, push it back down with a spatula. 

Serve immediately as is, or with guacamole and...

Air fry for 8-10 minutes at 400ºF, flipping halfway through for even crispness. (You can remove the rack once the cheese has melted and sealed the quesadillas.)

Add one flour tortilla in to the air fryer. Top with cheese and chicken. Spread evenly.

Top with the second tortilla. Place a metal rack on top to keep it from moving.

Cook at 370 degrees for 6 minutes, flipping half way

Start by seasoning the veggies with olive oil and everything but the bagel seasoning.  Add to basket and cook at 400F for 15 minutes, shaking halfway.

Pre-Cook Veggies

Lay your tortilla out on a flat surface and place veggies, beans and cheese on one side.  Fold the other half of the tortilla over and carefully place the folded tortilla in the basket.

Air fry for 8 minutes at 350F, flipping halfway and checking the basket during the first few minutes of cooking to ensure the tortilla hasn&#39;t floated up.  See expert tips for how to keep a tortilla down during air frying.
