Air Fryer Tofu Banh Mi

carrots, julienne

red onion,

rice wine vinegar

water

tbsp white sugar

tsp salt

brick extra firm tofu (14 ounces in water, drained)

soy sauce

hoisin sauce

lime juice

ginger paste

garlic, minced

mayonnaise

tbsp sriracha

baguette,

Sriracha Mayo

cucumbers, sliced thin

radishes, sliced thin

jalapeño, sliced thin

Air Fryer Tofu

avocado,

Red Onions and Carrots

Cilantro

Black Sesame Seeds

Add the carrots and red onions to a large mason jar*

Pour in enough warm water to cover all of the vegetables and fill the jar to the top

Put the jar in the refrigerator for at least 4 hours, better overnight

Pickled Red Onion and Carrots

Slice the pressed tofu in half vertically, slice the 2 halves each into 4 pieces about 1/2&#8243; wide, giving you 8 long thin pieces of tofu

In a shallow bowl combined the soy sauce, lime juice, hoisin sauce, ginger paste and garlic

Preheat the air fryer for 5 minutes at 400°F

Dip each piece of tofu into the soy mixture to coat

When the air fryer is ready, spray the basket with non-stick cooking spray

Add 4 pieces*** of tofu to the basket, make sure they are not touching

Flip the tofu and air fry for 5 more minutes on the other side

Dip the tofu back into the soy mixture to coat, set aside to cool

Air Fryer Tofu (for sandwich)

Follow all the same instructions as the tofu for sandwiches, except slice the tofu into 1-inch cubes instead of the long, thin stripes (when cut this way you can fit all the tofu into the basket of the air fryer**** at once)

Air Fryer Tofu (for Rice Bowls)

Combine the mayonnaise and sriracha in a small bowl*****

Spread a layer of sriracha mayo on the top and bottom

Line the bottom with a layer of cucumber, radish and a few jalapeño slices

Layer in the tofu****** (2 pieces per sandwich)

Top with a generous helping of pickled red onion and carrots

Garnish with cilantro and black sesame seeds

Banh Mi (Sandwiches)

Add cucumber, radish and jalapeno slices as you like around the bowls

Top with pickled red onions and carrots and avocado slices

Banh Mi Rice Bowls

Dig into this southern classic at home with this Air Fryer Chicken and Waffles recipe! Air fried buttermilk honey fried chicken on top of crispy cornbread waffles!

Air Fryer Chicken and Waffles

chicken thighs

white all-purpose flour

tbsp corn starch

tsp smoked paprika, divided

onion powder

tsp black pepper

buttermilk

tsp baking powder

tsp baking soda

cooking spray

tbsp honey

cornmeal

vegetable oil

maple syrup (optional)

Pat chicken dry with a paper towel, slice the chicken thighs in half

In a shallow bowl whisk together the flour, cornstarch, 2 tsp smoked paprika, onion powder, salt and black pepper

In another shallow bowl, whisk together the egg, buttermilk, baking powder and baking soda

Working one piece of chicken at a time, dip first into the dry mixture to coat, then dip into the wet mixture and then back into the dry

Preheat air fryer to 400°F for 5 minutes

Working in 2 batches, place half of the chicken thighs in the basket*

Air Fry for 6 minutes on each side, when you flip spray again with cooking spray

Carefully remove the chicken from the air fryer and place on a piece of parchment paper or aluminum foil

Drizzle with honey and sprinkle with the remaining paprika

Before you put the chicken in the air fryer, mix together the waffle mix

In a large bowl, whisk together the cornmeal, flour, baking powder, sugar and salt

In a small bowl, whisk together the egg, buttermilk and vegetable oil

Pour the wet mixture into the dry mixture and mix with a spoon or spatula until fully combined

When you put the chicken in the air fryer start making the waffles

Spray hot waffle maker with cooking spray

Add enough waffle batter to fill the waffle maker

Serve honey chicken on top of the waffles and top with maple syrup, if desired

Cornbread Waffles

Ended up being pretty bland all around. All of the seasoning for the chicken comes off with the breading. I would consider remaking this and seasoning the chicken with some salt and pepper before tossing it in the dry mix, as well as adding some honey to the waffle mixture since that ended up pretty bland as well. I am typically not a fan of all of the flavor coming from things I add on top after I've spent all of that time prepping spice mixtures.

The breading comes off easily once cooked. I was prepping dinner hours before and actually cut up my chicken and soaked it in the buttermilk for about 2/3 hours. Loved how it turned out
