These Vegan Almond Flour Brownies are the best gluten-free brownies I've ever tried! They're made in one bowl, are chewy, fudgy, rich with chocolate flavour and only 10 ingredients!

Vegan Almond Flour Brownies (One Bowl, Gluten Free & Fudgy)

Bob's Red Mill Egg Replacer* or 2 flax eggs

(100 grams) melted coconut oil oil

water

vanilla extract

cocoa powder

(112 grams) Bob's Red Mill Super Fine Almond Flour

sea salt

baking soda

vegan chocolate chips (optional, but recommended)

salt salt

Preheat oven to 325°F/160°C.

In a large bowl, add the vegan eggs, sugar and oil and mix until combined for about 3 minutes until fully incorporated and light and fluffy. Add the water and the vanilla extract and blend for another 2 minutes.

Add the cocoa powder, almond flour, baking soda and sea salt to the wet mixture and stir for about 3 minutes until fully combined. There should be no lumps and the almond flour should be fully incorporated.

Stir in the chocolate chips. Pour into a greased, parchment-lined, or a greased foil-lined 8x8 square pan. Bake for 35 minutes, or 40-45 minutes if you prefer cake-like brownies.

When finished, remove from oven and allow to cool completely in pan on a wire rack (at least 30 minutes). Once cooled, slice into 16 slices.

For an extra nice topping, meltdown some chocolate chips in the microwave, drizzle on top and sprinkle some sea salt flakes or coarse sea salt. Enjoy!

Preheat the oven to 325°F. Spray a nonstick 9 x 9-inch baking pan with cooking spray and line with two strips of parchment 8 inches wide and long enough to leave a 2-inch overhang on all sides.

In a medium bowl, whisk 1 large whole egg with 1 egg yolk (separate the whites and reserve, set aside).

Add 1⁄4 cup water, the honey, and 1 teaspoon of the vanilla and stir with the spatula until combined.

In a large bowl, whisk together the almond meal, cocoa powder, salt, and baking soda.

Pour the egg mixture into the bowl with the dry mixture and mix well with a spatula. Fold in the chocolate chips.

Pour the batter into the prepared baking pan.

Soften the package of cream cheese in the microwave, mix in sugar, reserved egg white and remaining 1 teaspoon vanilla.

Pour over the brownie mix and spread over the top with a spatula, marbelize the with a toothpick.

Bake until a toothpick inserted into the center comes out clean, about 30 minutes.

Let cool for at least 30 minutes before cutting into 12 bars.

How To Make Flourless Cheesecake Brownies

These are the best almond flour brownies you&#039;ll ever make, and they are naturally gluten-free. I love how you only need a few minutes to stir the batter together!

Preheat the oven to 350ºF and line an 8-inch square pan with parchment paper. (I like to spray the pan lightly with oil first, so that the parchment paper will stick in place.)

In a large bowl, combine the almond flour, coconut sugar, cacao, eggs, oil, baking soda, vanilla, and salt, and stir well to form a thick batter. It will be much thicker and stickier than a traditional brownie batter, so be sure to mix well and break up any lumps.

If adding the mini chocolate chips, reserve 2 tablespoons to sprinkle over the top, then fold the rest of them into the batter. Transfer the batter to the prepared 8-inch pan, then use a spatula (or use wet hands) to press the batter evenly into the bottom of the pan. It&#039;s okay if it&#039;s not perfectly smooth, because the batter will spread and expand as it cooks. Sprinkle the reserved chocolate chips over the top.

Bake at 350ºF until the center of the pan doesn&#039;t jiggle, about 25 to 30 minutes. If using a larger 9-inch pan, the brownies might cook a little faster, so be sure to keep an eye on them around the 20 to 25 minute mark. It&#039;s normal for the brownies to puff up in the oven, and then deflate slightly as they cool.

Let the brownies cool for at least an hour before slicing them into 16 squares. They probably won&#039;t last long before they are all eaten, but I recommend storing these in an airtight container in the fridge for the best shelf life. They should last in the fridge for up to 5 days, if you don&#039;t eat them all by then.

Preheat your oven to 325°F. Grease an 8-inch square baking pan, and then line it with overhung sheets of crisscrossed unbleached parchment paper. Set the pan aside.

Place the chocolate and coconut oil in a small, heat-safe bowl and then place the bowl over a small pan of simmering (not boiling) water, taking care that the bowl doesn’t touch the simmering water.

Melt the chocolate and coconut oil, stirring occasionally, until smooth.

Remove the bowl from the heat, and add the coconut sugar and honey to the mixture.

Whisk to help the coconut sugar to dissolve in the warm mixture, and to integrate the honey.

Alternatively, the oil and chocolate can be melted in the microwave in 30-second bursts, stirring in between until melted and smooth before adding the coconut sugar.

In a large bowl, place the eggs, and whisk or mix until well-beaten and combined.

Add the melted chocolate, oil, and sugars to the bowl slowly, whisking constantly.

Add the cocoa powder and whisk until the cocoa powder has been absorbed. Using a handheld mixer, beat until very well-combined.

Add the almond flour, coconut flour, baking soda, and salt, and mix with a silicone spatula or spoon until just combined. The batter will be thick and sticky.

Transfer the brownie batter to the prepared pan and, using an offset or silicone spatula, spread into an even layer. It helps to moisten the tool you are using to smooth the top a bit to prevent it from sticking.

Place the pan in the center of the preheated oven. Bake just until the brownies are no longer wet in the center, about 25 minutes. The brownies will not appear wet and as shiny in the middle, and a toothpick inserted there will come out with only a few moist crumbs, but not wet.

Remove the brownies from the oven and allow them to cool in the pan at room temperature until the pan is no longer hot to the touch.

For clean lines when you slice the brownies, place the brownies, still in the pan, in the refrigerator to chill for about an hour before slicing them.

When you’re ready to slice the brownies, remove them from the pan and peel away the foil. Slice the brownies into 9 or 12 equal rectangles or squares.

Wanted to post an update. Didn’t use anything to make them more Most bit tried a different chocolate with a higher cocoa butter content. Made a huge difference. Still not super fudge like but definitely better.

These did not turn out like I expected for me. They were ok, but not fudge like. More like chocolate cake. They were a bit dry as well. May try again but will add a ripe banana for more moisture or something similar.
