This easy, one-pot American Goulash (aka Beefaroni) is the epitome of comfort food and a meal the entire family will love! It starts with a flavorful homemade meat sauce, then macaroni noodles cooked in the sauce, and finished with a sprinkle of cheese.

American Goulash (Beefaroni)

olive oil

onion (, finely diced)

garlic (, minced)

lb beef

salt and pepper

parsley

basil

EACH garlic powder, and paprika

tsp EACH dried oregano and, chili powder

red pepper flakes

tomato paste

tomato sauce

Worcestershire sauce

sugar

low-sodium beef broth (, divided)

elbow noodles ((8 oz), uncooked)

cheddar cheese

Heat a large skillet with sides, over medium heat. Add oil. Once hot, add onion and saute for several minutes into tender and translucent. Add garlic and cook for 30 seconds.

Push onion to the side and add ground beef and season well with salt and pepper. Cook until browned, crumbling it into very small pieces as it cooks. Add all dry spices and cook for 1-2 minutes.

Stir in the tomato paste, tomato sauce, sugar, Worcestershire and 1 ½ cups beef broth. Simmer on low for 15-20 minutes. Taste and add additional seasonings, if needed.

Add additional 3/4 cup broth and uncooked pasta. Cook until pasta is tender. Stir in freshly grated cheese and allow to melt. Serve immediately.

Ready in just 30 minutes and makes a big batch that’s perfect for potlucks, picnics, game days, or to have planned leftovers on hand. This classic American goulash recipe is always a family favorite! 

beef (~85 to 95% lean)

ground sausage* (or another ground protein if desired)

elbow macaroni (or another small shaped pasta)

small white or yellow onion (diced small)

green pepper

garlic (finely minced)

tomatoes

marinara or tomato sauce

beef broth (I use reduced sodium)

soy sauce (I use reduced sodium)

Italian seasoning

salt (or as desired)

black pepper

To a very large deep-sided pot or Dutch oven, add the ground beef, ground sausage or whatever combination of proteins you&#x27;re using, and cook over medium-high heat, stirring and crumbling the proteins as the cook to ensure cooking. If necessary or desired, drain off any fat. I don&#x27;t drain it even if I have some because the fat will prevent the pasta from sticking. Tip -  Begin cooking the pasta while the proteins are cooking.

While the proteins are browning, cook the pasta in a separate pot according to package directions. Drain and set aside until step 6.

To the Dutch oven with the browned proteins, add the onions, green peppers, and cook for about 3 to 5 minutes, or until beginning to soften; stir frequently.

Add the garlic and cook for 1 minute or until fragrant; stir constantly.

Add the diced tomatoes, marinara, beef broth, soy sauce, Worcestershire sauce, Italian seasoning, salt, pepper, stir to combine, and simmer uncovered for 10 minutes.

Add the cooked pasta and stir to combine.

Optionally garish with parsley and serve. Leftover goulash will keep airtight in the fridge for up to 5 days or in the freezer for up to 4 months. It reheats very well in the microwave.

American Goulash Recipe

lb lean ground beef 90/10

celery (finely chopped)

granulated sugar (or more to taste)

oz crushed tomatoes

chicken stock

water plus more as needed for cooking

macaroni pasta (10 oz,

parmesan cheese (freshly grated, plus more to serve)

Set a heavy pot or 5 1/2 Qt Dutch oven over medium/high heat and add 1 Tbsp olive oil. Add ground beef to the hot pot and break it up with a spatula for 1 minute.

Add carrot, onion, celery and garlic and stir until vegetables are softened, 5 minutes. Season with salt, oregano, pepper and sugar and stir to combine.

Add crushed tomatoes, tomato paste, Worcestershire sauce, chicken stock and water. Bring to a boil then reduce heat to a simmer, cover and cook for 20 minutes.

Add macaroni and stir to combine. Reduce heat to a simmer, cover and cook 20 minutes, stirring occasionally, especially towards the beginning of cooking pasts so it doesn’t settle and get stuck to the bottom of the pot. Add more hot water 1/4 cup at a time or as needed if the mixture seems dry. It should remain very moist and saucy.

Stir in parmesan cheese and season with salt and pepper to taste if needed. Serve with more parmesan.
