This easy chicken casserole is a wholesome dinner that&#039;s made from scratch with simple ingredients.

Amish Chicken and Corn Casserole

salted butter

all-purpose flour

celery salt

salt

milk (I use 2%), (at room temperature)

chicken

corn kernels ((fresh, frozen, or canned))

Ritz cracker crumbs butter

Preheat oven to 350°F. Grease a 2-quart baking dish and set aside. In a large skillet, melt the butter over medium heat. Sprinkle with flour and whisk constantly for 1 minute. Add the celery salt and kosher salt; whisk to combine. Slowly add the milk, whisking constantly, until combined. Bring the sauce to a simmer and cook, whisking constantly, for 1 minute. Remove from the heat.

Add the chicken and the corn to the sauce; stir to combine. If the sauce seems too thick, just add a little bit of extra milk until it reaches the desired consistency. This is also a great time to taste the mixture and season with any additional herbs or spices that you might enjoy.

Transfer the mixture to the prepared baking dish. Sprinkle the buttered cracker crumbs over top.

Bake, uncovered, until hot and bubbly on the inside and browned on top, about 25-30 minutes.

This casserole was perfect!  Added cooked chicken that I had from leftovers, fresh corn, chopped green onions, garlic powder, paprika and it was delicious!  Thank you!

It is delicious and very easy to make.  Next time I make this I am going to cut back a little on the flour.  Love this recipe~

The casserole was delicious!  My husband loved it.  I added broccoli florets to it.

I made this casserole but used Panko bread crumbs in stead as I positively HATE Ritz crakers with a vengence.  I was forced to eat them with peanut butter as a kid and refuse to eat either or even have them in my house. The casserole came out perfectly.  Thanks for posting.
