These Amish Oatmeal Treats are wonderful for any occasion! Perfect for the holidays!

Amish Oatmeal Treats

butter

peanut butter (I use crunchy)

white sugar

brown sugar

eggs

milk

vanilla

all purpose flour

baking soda

salt

oats

chocolate chips

Beat margarine, peanut butter and sugars together until creamy.  Blend in eggs, milk, and vanilla.  Add flour, soda, and salt to the creamed mixture.  Blend well.  Stir in oats and chocolate chips.

Drop by spoonsfuls (I roll mine into balls  with my hands about the size of a walnut and place the ball unmashed) onto ungreased cookie sheet.

Bake in moderate oven 350 degrees about 15 minutes.  (I like the tops brown, so I usually turn on the broiler for about two minutes before taking out of the oven).  Makes about 3 dozen cookies.

Delicious, creamy Amish Country Casserole is an economical recipe enough for 8 - 10 servings. Make-ahead and freezer friendly recipe !

Amish Corn Pie 

potatoes,

can cream style corn

can whole kernel corn, drained

hard boiled eggs, chopped

black pepper

onion powder

butter,

refrigerated pie dough rounds

Preheat oven to 400 degrees F and fit one pie round into a 9 inch pie dish. Set aside.

Add the potatoes, drained whole kernel corn, creamed corn with liquid, eggs, and seasoning to a large pot and simmer for 15 minutes.

Transfer the filling to the prepared pie crust and top with butter pats.

Fit the second pie dough round on top and crimp the edge. Cut a few slits into the center of the pie to allow steam ventilation.

Bake the pie for 30 minutes and then cover with foil and bake for an additional 10 minutes. Serve hot.

Amish Onion Fritters

all-purpose flour

sugar

cornmeal

baking powder

white onions, chopped (about 1 medium onion)

salt and black pepper,

In a medium bowl, whisk together the flour, sugar, cornmeal, baking powder, and milk. Add onions and salt and pepper and stir to combine.

Meanwhile, heat about 1/2-inch of oil in a skillet over medium-high heat.

Once oil reaches 175°F, drop batter by the tablespoon into the hot oil, spreading the fritter out slightly. Brown on both sides until crisp.

Remove to a a paper towel to drain. Serve hot and enjoy!
