Classic apple chutney

½kg cooking apples,

light muscovado sugar

raisins

onions,

mustard seeds

ginger

salt

cider vinegar

<p>Combine all the ingredients in a large, heavy saucepan. Bring the mixture to a boil over a medium heat, then simmer uncovered, stirring frequently, for 30-40 mins, or until thick and pulpy. Remove from the heat, leave to cool and transfer to sterilised, clean, dry jars and seal.</p>

Roast Pork Loin with Apple Chutney

pork loin roast (2 to 2.5 lbs)

olive oil

black pepper

garlic

brown sugar

onion powder

smoked paprika

cayenne pepper

maple syrup

cayenne pepper ((more

Pat the pork loin dry with paper towels. Brush the pork loin with olive oil.

Whisk together the pepper, garlic, salt, brown sugar, onion powder, paprika,&nbsp; and cayenne&nbsp;pepper in a small bowl and sprinkle generously all over the pork loin. Save any remaining spice rub for another recipe. Place the seasoned pork loin on a baking sheet and let it sit for at least 20 minutes at room temperature as you preheat your oven.

Preheat the oven to 475° F.

Place pork in oven and roast for 15 minutes.&nbsp;

Lower heat to 350°F, and continue roasting the pork for 45 minutes, or until the internal temperature of the pork loin roast is about 145 degrees F. Allow 10 minutes of rest time before slicing.

How to Roast Pork Loin:

Heat olive oil in a small saucepan over medium-low heat. Add the shallots and cook for about 1 minute to soften.

Add the apples, cranberries,&nbsp;and ginger to the saucepan. Season with salt and cook for about 2 minutes, stirring occasionally.

Stir in the vinegar, maple syrup, garlic, and cayenne pepper, and lower heat to a simmer. Cover and cook for about 30 minutes, or until the apples have cooked down and the chutney is thick and flavorful. Adjust seasoning with salt, if necessary. Remove from heat and set aside to cool.

How to Make Apple Chutney

A delicious &amp; fragrant relish made with apples, spices &amp; vinegar. Serve it over bread, parathas, tortillas, snacks &amp; even with grilled meat dishes.

apples ((½ kg, 1 Lb, 3 medium))

oil ((or ghee) (refer notes))

cinnamon ((2 inches) (True/Ceylon cinnamon))

star anise ((2 petals))

cloves

ginger (minced)

red chili powder

fennel ((saunf powder))

cumin ((roasted jeera powder))

sugar

¼ teaspoon ground pepper ((black pepper powder))

Rinse the apples well under running water and peel them. Chop them finely. You can also use a chopper.

Preparation

Pour oil or ghee to a hot pan or pot. Add the spices - cloves, star anise &amp; cinnamon.

When they begin to sizzle add the ginger &amp; let it fry for a minute. Then lower the flame and quickly stir the red chilli.

Add apples, sugar, cumin powder, fennel powder, pepper and vinegar.

Stir and cook covered on a low heat until the apples turn tender.

Then open the lid and cook further until almost all the liquid evaporates.

Mash a small portion of this mixture with the spatula to give a thicker texture to the apple chutney.

Turn off the stove when most of the excess moisture evaporates. (refer video or pics below)

Cool the apple chutney completely and store it in a clean dry glass jar. It keeps good for several months if you keep it in a dry shelf.
