Who knew Cabernet and cranberries would make such a dynamic duo? Add dried figs (plumped in the Cabernet ahead of time), and you end up with a winey, fruity fig bar, minus the cookie. This sauce is so fine, you'll be spooning leftovers on ice cream or slathering it on toast in place of jam. This apple crostata is a rustic dessert made with flaky pasta frolla pastry dough that&#39;s filled with cinnamon and sugar-coated apple slices and baked until golden.

Apple Crostata

(250 grams) all-purpose flour (plus more for rolling)

(80 grams) granulated sugar

(113 grams) butter (cold and cubed)

egg (at room temperature)

egg yolk (at room temperature)

fine sea salt

lemon zest (or orange zest)

apples (sliced)

(50 grams) packed brown sugar

(12 grams) all-purpose flour

cinnamon

lemon juice

Add the flour, salt, sugar, and lemon zest to the bowl of a food processor and pulse to mix the ingredients. Add the cold butter cubes and pulse again. You should have small coarse pieces.

Next, add the egg and pulse just a few times until the dough is formed.

Place the dough onto a work surface and knead for a few seconds only. You just want to bring the dough together and form 1 ball.

Wrap the ball in plastic wrap and refrigerate for 1 hour before using. The dough can be made 2 days ahead of time.

For the pasta frolla (sweet shortcrust pastry dough)

Slice your apples into quarters then slice into 1/8&quot; thick slices, or slice using a mandoline.

In a large bowl add the lemon juice to the apples.

In a small bowl whisk together the brown sugar, cinnamon, and flour.

Mix the sugar mixture with the apple slices until combined.

For the filling

Preheat the oven to 375f and place the rack in the center of the oven. Remove the dough from the refrigerator and allow it to sit for 10 minutes.

On a lightly floured surface, roll out the dough to a 12-inch circle, about 1/3-inch thick, and transfer to a parchment paper-lined baking tray.

Arrange the apples in the center of the dish leaving at least 1 - 1 1/2 inches around the perimeter.

Begin to gently fold over the edges of the dough while leaving the center exposed.

Brush the beaten egg wash around the edge of the dough with a pasty brush and sprinkle with the granulated sugar.

Bake for 40-45 minutes or until the edges are crisp and golden.  Allow the crostata to settle for 10 minutes prior to serving.  Enjoy!

Love this one! I wasn’t sure about the egg yolk, and the whole egg. You didn’t specify but I’m assuming the yolk goes into the dough, and the whole egg is used for the egg wash. Hope that’s right but either way it’s a keeper!

Homemade Italian Apple Pie

apples (I use Royal Gala)

brown sugar

Pre heat oven to 350F (180C). Grease and flour an 8&quot; or 9&quot; pie plate (20-23 cm)

In a medium bowl whisk together the flour (start with 1 3/4 cups) sugar and baking powder, cut in the butter with a pastry blender until it resembles coarse crumbs, then add the egg and egg yolk, bring it together slightly with a fork. If dough is too wet then add extra flour, one tablespoon at a time.

Turn onto a lightly floured surface, work the dough together to form a soft dough (if too sticky add a little more flour). Wrap in plastic and refrigerate for at least 30 minutes.

Remove from fridge and knead a few times to soften up the dough, if needed. Divide the dough into 2 equal parts, and roll with a lightly floured rolling pin into two circles. Fit the dough into the prepared pie plate with the dough.

FOR THE PIE CRUST

Meanwhile, while the dough chills in the fridge start to prepare the filling. In a medium-large sized pot add the butter and melt over low heat, then add the brown sugar, apples and cinnamon, stir to combine and continue to cook on low / medium heat for approximately 10-15 minutes, stirring often, then add the cornstarch, stir to combine and continue to cook for approximately 3-5 minutes until thickened (will still be a little runny), remove from heat.

Pour the filling on the pie crust and top with the second pie dough*.  Bake for approximately 30 minutes. Check after 20 minutes and if crust is browning too much then cover with foil and continue baking. Enjoy!

FOR THE APPLE FILLING

Well now, that was certainly interesting!  I'm more accustomed to a North American pie crust that is flaky - this crust is friable. Certainly nothing wrong with that - in fact I think I much prefer a crust that is more tender than flaky.  One thing about adding the cornstarch to the apples - I would suggest you remove the apples from the liquid first then make a slurry with the cornstarch before adding it to the apple liquids.  Less chance of getting lumps in the sauce.  Once thickened - then add the apples back in.

Made it for Thanksgiving and it was a huge hit !! Thanks for a great and easy recipe
