These delicious Apple Crumb Bars feature a shortbread crust, cinnamon apples, and an oat crumble topping. Finish with a generous drizzle of salted caramel sauce and enjoy every bite of this delicious fall dessert.

Caramel Apple Crumb Bars

sugar

brown sugar (packed)

all purpose flour

baking powder

peeled, thinly sliced apples ((about 3-4 apples))

Preheat oven to 350°, with a rack in the center of the oven. Line an 8x8 baking pan with foil or parchment paper, grease it, and set aside.

Using a hand mixer or stand mixer fitted with the paddle attachment, beat granulated sugar, brown sugar, flour, baking powder, and salt until combined. Add cubed butter and vanilla and beat until the butter is broken up into small irregular pieces. If necessary, use your fingers to rub the butter into the flour. Once the mixture is crumbly and the butter is the size of pebbles, place in the refrigerator while you prepare the filling.

Crust and topping:

In a separate bowl, combine all ingredients for apple filling. Stir until well combined.

Filling:

Scoop 2 cups (loosely measured, not packed) of the crust/topping and dump it into the baking dish. Use the back of the measuring cup to press the mixture into an even layer to form the crust. Set aside the remaining crumb mixture.

Add the apples on top of the crust. Arrange them in tight layers, overlapping the pieces.

Stir ⅓ cup oats and ¼ teaspoon cinnamon into the reserved crumb mixture. Sprinkle the topping over the apples pressing some of it together to form clumps.

Cover with foil and bake for 30 minutes. Remove the foil and bake for another 25-30 minutes, until the topping is light golden brown and the apples are tender (insert a sharp knife to check). Place pan on a wire rack to cool. Drizzle with caramel sauce. Serve warm, room temperature, or chilled. Top with ice cream and caramel sauce. Note: The bars will cut more neatly if chilled.

These easy to make Apple Pie Bars have a buttery shortbread base, a delicious Apple Pie filling then topped with a buttery crumb topping.

Apple Pie Bars

Pre-heat oven to 325F (160C), lightly grease and flour an 8 inch (20 cm) square cake pan.

In a medium bowl whisk together the flour and salt. Set aside.

In a large bowl cream the butter on medium speed, then add the sugar and beat together. Add the whisked flour and combine well. Spread evenly on the prepared pan and bake for 5 mintues.

Raise the heat to 350F (180C).

SHORTBREAD BASE

While the base is baking, mix together the chopped apples, flour, brown sugar and cinnamon. Spoon evenly on the shortbread base.

APPLE PIE FILLING

In a medium bowl mix together the flour, brown sugar and cinnamon, cut in the cold butter until you have coarse crumbs, then gently stir in the nuts. Sprinkle evenly over the apple pie filling. Bake for approximately 40-45 minutes or until the apples are tender. If the top starts to brown too much, then cover with foil and continue to bake. Enjoy!

CRUMB TOPPING

You are not ready for these Apple Crumb Cookie Bars! With a slightly cakey sugar cookie base, a warm brown sugar apple filling, and a jaw dropping crumble topping, I am floored by these.

Apple Crumb Cookie Bars

(222 grams) salted butter, softened

(162 grams) brown sugar

(76 grams) granulated sugar

eggs

tsp vanilla extract

tsp molasses

(494 grams) all-purpose flour

tsp baking powder

tsp salt

apples ((About 5 medium apples))

Tbsp salted butter

(81 grams) brown sugar

Tbsp corn starch

cookie dough

(50 grams) rolled oats

Tbsp brown sugar

Start by making the apple filling. In a sauté pan over medium heat, melt the butter.

Once melted, add the diced apples (¼-inch pieces), brown sugar, cornstarch, and cinnamon. Cook, stirring frequently, for 8–10 minutes, until the apples are fork-tender. Set aside.

Preheat the oven to 350°F (180°C) and line a 9×13 pan with parchment paper, leaving overhang for easy removal.

To make the cookie dough, cream the butter and sugars in a stand mixer until light and fluffy. This will take about 2 minutes.

Scrape down the bowl,  and add the eggs, vanilla, and molasses; mix until combined.

Once combined, add the flour, baking powder, and salt and mix just until a dough forms.

Remove 1 cup of dough and set aside for the crumble topping. Press the remaining dough evenly into the prepared pan.

Spread the apple filling evenly over the dough.

Make the crumble by adding the oats, brown sugar, and cinnamon to the reserved cookie dough. Mix until combined.

Crumble the topping over the apples, leaving some filling visible.

Bake for 22–26 minutes, or until the topping is lightly browned.

Cool completely before removing from the pan and slicing.

Store in an airtight container at room temperature for 3–5 days. This is best enjoyed the first day for the crunchiest topping.
