Apple Crumble Bars

/ 1 stick unsalted butter (, melted)

(300 grams) flour (, plain/all purpose)

(100 grams) white sugar

tsp baking powder

salt

(30 grams) rolled oats (Note 1)

(35 grams) plain flour ((all purpose flour))

(50 grams) white sugar

cinnamon

tsp nutmeg

Salted caramel sauce

Ice cream!

Preheat oven to 180C/350.

Grease a 20cm/8" square pan and line with baking/parchment paper with overhang (so it can be lifted out once cooked).

Mix together butter, flour, sugar, baking powder and salt until you can no longer see white bits of flour.

Add egg and mix.

Lightly press 2/3 of the mixture into the bottom of the pan.

Bake for 15 minutes until slightly golden, then remove and cool for 5 minutes.

Apple Filling: While the base is cooking, mix together Apple Filling ingredients in a bowl.

Add oats into reserved crumble mixture. Mix with wooden spoon / fingers until oats are mostly incorporated into the dough.

Crumble Topping:

Spread Apple Filling on base, then use hands to crumble topping all over.

Bake for 30 - 35 minutes or until the top is deep golden.

Remove and allow to cool in the tin before lifting out of the tin using the baking paper.

Cut and serve! Eat with hands, or serve on plates. Take it over the top with ice cream and salted caramel sauce!

Apple Pie Bars Recipe

apples

g (2 tablespoons) granulated sugar

g (2 tablespoons and 1 teaspoon) all-purpose flour*

lemon juice

nutmeg

280 g (2 cups) all-purpose flour (dip and sweep)**

185 g (3/4 cup and 1 tablespoon) butter, cut into small cubes, cold

sugar

Preheat the oven to 350°F(177C°). Grease 8 inch (20cm) square oven-proof dish and line the bottom and sides with parchment paper, about 2 inches(5 cm) of overhang on each side.

Peel, core and slice the apples into small pieces.  Place the chopped apples into a medium bowl.  Toss the apples with lemon juice, sugar, flour/cornstarch, cinnamon and nutmeg. Set aside the bowl.  

Apple Filling

Combine flour, cinnamon, and sugar in a large bowl.&nbsp;&nbsp;

Add the cold cubed butter and cover with flour mixture so you can cut the butter into the flour mixture easily.&nbsp; You can use 2 forks or a pastry blender. Alternatively, you can rub with your fingertips.

Crust &amp; Crumbles

Spread 2/3 of the mixture into the oven-proof dish with a spoon.&nbsp; Lightly flour the spoon to avoid it sticking to the flour-butter mixture. You can spread with your hand too.&nbsp; Add the apple mixture over the dough and cover the apples with the remaining 1/3 dough. You can make some big crumbles by squeezing the dough with your hand.&nbsp;&nbsp;

Bake for 55 minutes until the top becomes golden brown and the crumbles are crunchy. Let it cool completely before slicing.&nbsp; You can let it cool at room temperature for 1-1,5 hours and then you can keep in the freezer so it can cool faster.&nbsp; Once completely cool, lift the paper from the sides, remove the bars from the dish, cut into 16 pieces.&nbsp; You can keep in the fridge in an airtight container up to 4 days or freeze up to 3 months.

Assemble

These healthy apple crumble bars are vegan, gluten-free, and made with wholesome ingredients and fresh apples. You’ll love the cinnamon apple filling paired with the oatmeal crumble crust and topping!

Healthy Apple Crumble Bars

old fashioned rolled oats (divided)

Tablespoons coconut oil (room temperature/solid)

coconut sugar

sea salt

Tablespoons chopped pecans

vanilla

water

arrowroot powder

Prep

Preheat oven to 350°F. Line a square (8x8) baking dish with parchment paper.

Cook apples

Add apples, cinnamon, nutmeg, water and arrowroot powder into a saucepan. Cook over medium-high heat for about 15-20 minutes, stirring often and watching to make sure the mixture doesn’t burn. You’ll know it’s done when the mixture has thickened and the apples are soft, but still hold their shape. Remove from heat, stir in vanilla and set aside.

Process

Add 1 cup of oats to your food processor and process until oats turn into a fine oat flour.

Combine

Add remaining cup of oats, coconut sugar, coconut oil and sea salt into the food processor and pulse until everything is combined and the size of coarse crumbs. Don't over process the mixture, you want to be able to visibly see some of the oat flakes.

Measure

Measure out ⅔ cup of the oatmeal crumble mixture for the topping into small bowl and stir in the chopped pecans.

Press crust

Use remaining oatmeal crumble mixture to create crust. Evenly press into the parchment lined baking dish using your hands.

Pour

Pour apple filling on top and sprinkle the oatmeal + pecan crumble on top.

Bake

Bake for 35-40 minutes until the bars are golden brown on top. Remove from oven and place on a wire rack to cool completely. Be patient, if you don’t let them cool before removing them from the pan they will fall apart. I recommend putting them in the fridge or freezer to chill, about an hour or so.

Serve

Once cool, cut into 9-12 bars and enjoy right away or chill longer in the fridge before serving. I personally like the bars chilled because they hold together better if you&#39;re eating them as a snack. If you&#39;re serving them for dessert, I recommend placing a portion into a bowl, warming in the microwave and topping with ice cream.

Store

Leftover bars will keep for 4-5 days in the fridge in an airtight container. You can also freeze them for longer storage.
