Small Batch Apple Cider Donuts

Pour 1 ¼ cups apple cider into a small saucepan. Bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally until reduced to ¼ cup, about 15-20 minutes. Remove from the heat and let cool for 10 minutes.

Preheat oven to 350°F (177°C). Spray donut pan with non-stick spray. Set aside.

 In a small bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

In a separate medium-sized bowl, whisk together the melted butter, brown sugar, granulated sugar, egg yolk, vanilla, reduced apple cider, and milk. Pour the dry ingredients into the wet ingredients and whisk everything together until smooth and combined.

Spoon the batter into a lightly greased donut pan, filling them about ⅔ of the way.You can also do this by using a pastry bag or a medium-sized zip-top bag. I find it easiest to place the zip-top bag into a tall glass which makes it easier to fill. Roll the top edge of the bag over the rim of the glass and use a spoon to fill the bag with the batter. Once the bag is filled, squeeze out any excess air. Cut off a corner of the bottom of the bag and pipe the batter into each donut cup.

Bake for 15-17 minutes or until the edges and tops are lightly browned.

Cool the donuts for 5 minutes. Then, melt 3 tablespoons of butter in a bowl. In a separate bowl, mix together granulated sugar and cinnamon. When the donuts are cool enough to handle, dip both sides of each donut in the melted butter, then generously in the cinnamon sugar topping.

These apple cider donuts are best enjoyed immediately.

Baked Apple Donuts with Cinnamon Sugar

(240 grams) all-purpose flour, spooned and leveled ¹

(100 grams) granulated sugar

tsp baking powder

apple pie spice ²

tsp Kosher salt

(158 grams) unsweetened applesauce

olive oil

(180 grams) milk (or almond milk) ³

Tbsp (15 grams) pure vanilla extract

Tbsp (57 grams) unsalted butter,

tsp ground cinnamon or pie spice

Preheat the oven to 400℉. Grease two donut pans with butter or baking spray. Set aside.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, apple pie spice, and salt until combined. Set aside.

In another mixing bowl, whisk together the applesauce, olive oil, milk, and vanilla until smooth and combined.

Fold the applesauce mixture into the dry ingredients, until just mixed and no streaks of flour remain.

Transfer the batter to a large piping bag (or a ziploc bag), snip off the corner, and pipe the batter into the donut pans. Each donut mold will be filled almost to the top.

Bake until golden brown, and a toothpick inserted into the center of each donut comes out clean, about 10-12 minutes.

Remove from the oven and let cool in the pans for 10 minutes before transferring to a baking rack to cool.

When the donuts are cool enough to handle (15 minutes or so), add the melted butter and cinnamon-sugar mixture to two small shallow bowls.

Dip each donut in the melted butter followed by the sugar topping until well-coated. Enjoy!!

Remove your puff pastry sheet from the fridge and allow it to sit at room temperature for about 10 minutes. If frozen thaw according to package instructions.

Using a cutting board, place the apple on its side and cut into apple rings of about 1/4 inch thick. You should have between 8 and 10 apple slices.

Remove the core from the apples with a small cookie cutter to create a ring shape.

Combine the sugar and cinnamon in shallow bowl.

Dip the apple rings in the cinnamon sugar.

Lightly roll the puff pastry on a floured surface. Cut into thin strips.

Wrap each apple ring with the puff pastry strips until completely covered. It will take about 2 to 3 strips for each apple ring.

Lightly beat the egg and brush the apple rings. Sprinkle a pinch of cinnamon sugar on top.

Bake until the puff pastry is golden brown, it will take between 15 to 20 minutes. Start checking your puff pastry at the 15 minute mark. Cook a bit longer if needed.

LOVE this recipe!!  I've made it a few times and learn something new each time! They are a hit with my family.  Last night my son and his girlfriend came for dinner and they enjoyed helping out and making them! I tend to make them before dinner is served so once they are done I place them on a cooling rack to help keep the crispness.  If they are too cool by the time they are ready to be served, I place them in the toaster to warm and crisp them back up.  Excellent desert.  Thank you so much for sharing!
