Delicious home made apple pie filling and caramel surrounded by flakey pie crust. These mini pies are absolutely additive. Ingredients

Apple Pie Cookies

lemon juice (30 milliliters)

apples

sugar

unsalted butter

cinnamon

nutmeg

flour

tbs sugar

tsp sea salt

tbs ice water

tsp all-spice

tsp ginger

tbsp cream

brown sugar

butter

cream

tbsp vanilla extract

salt (generous)

Combine ingredients in small pot and heat over medium-low heat while whisking. Cook 7-8 minutes. You will notice when the caramel begins to thicken.

Remove from heat and set aside.

For the Caramel

Once your apples are roughly chopped, put them in a bowl and add the sugar, spices and lemon juice. Toss them around to make sure they are evenly coated. Now in a large skillet, melt the butter over medium-high heat. Add the apples and cook stirring until the sugar dissolves and it begins to simmer, about 2 minutes. Cover it up, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.

Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to get as much liquid as possible. Return the juices to the skillet, and simmer over medium heat until thickened and lightly caramelized, about 8-10 minutes.

In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely. Chop into small piece once cool and return to bowl.

For the Filling

In a large bowl, combine flour, sugar, salt, and spices. Whisk together. Grate in chilled butter and drizzle in ice cold water. Mix using a fork. You can also&nbsp; whiz together in a food processor.

Shape into two disks, wrap in plastic and chill for 20 minutes.

Crack an egg into a small bowl and add a tablespoon of cream them mix well and chill until ready to use for egg wash.

Roll your pastry dough out to about 1/4" thick. One half of the dough is for the bases and the other half is for the lattice tops. You will probably want to chill the dough for the lattice tops until just before cutting the strips and arranging on top.

Cut into circles.

Brush with caramel.

Add about 1 tablespoon of the apple pie filling to the center of each circle. Brush edge with egg wash.

Arrange the lattice top and brush with egg wash again.

Cut and remove excess with the same round cutter you used for the base.

Sprinkle with sugar (and cinnamon if desired) and bake at 350F for about 20-25 minutes until golden brown.

These apple pie cookies are stuffed with delicious home made apple pie filling and caramel, then surrounded by flakey pie crust. These mini pies are absolutely additive, although I’m still not sure if they should be called mini pies, cookies or hand pies… 
These mini apple pies are an autumn favorite of mine. I love the way this lattice looks and the taste! I can’t explain how delicious they are and a huge part of that is the home made caramel. Each bite has the perfect combination of apple, caramel and flakey crunch.

A FEW NOTES

*The recipe makes a lot of filling. You can repurpose the leftovers into extra for topping pancakes, ice cream, or snacking.
*It’s easiest to assemble the cookies on the prepared baking sheet as they can be difficult to transfer.
*If you’re short on time you can use frozen pastry dough; pre-made caramel and/or even store bought pie filling. That said, all the components are easy to make and you will DEFINITELY taste the difference if you take the time to make these from scratch.

Apple Hand Pies

Unroll the pie crusts and use a 4 inch round cookie cutter to cut 4 circles out of each pie crust.

Place 2 tablespoons of pie filling in each circle and fold the circles over to cover the pie filling. Use a fork to crimp the edges closed.

Place the pies in an even layer in the air fryer. You may need to work in batches depending on the size of your air fryer. 

Cook at 350 degrees for 10 minutes or until the crust is lightly golden.

Set pies aside to cool for 20 minutes before glazing.

To make the glaze, beat together the powdered sugar, milk, and vanilla until smooth.

Use a fork to carefully dunk each pie in the glaze to coat. 

Set pies on a wire rack over a baking sheet to allow excess glaze to drip off and glaze to set.

These classic Apple Hand Pies are the epitome of cozy fall flavors. Each bite is filled with apples cooked with brown sugar, lemon, cinnamon, and nutmeg that are encrusted by a deliciously flakey and buttery crust.

all-purpose flour

water (divided)

egg (beaten, for egg wash)

Honey Crisp or Envy apples ((2 medium))

lemon juice

lemon zest

heavy cream

unsalted butter (melted)

tsp vanilla extract

In a large bowl, mix together the flour, sugar, and kosher salt. Using a box grater, grate the cold butter atop the flour mixture. Transfer to the freezer to chill for 10 minutes. Working quickly, and using your hands, break the butter bits into the flour until they’re evenly distributed and resemble the size of teeny, small peas.

Add 50% of the recommended water and mix. The mixture will be shaggy at this point. From here, add 1 tablespoon of water at a time until the dough comes together. Flour your counter and dump the dough onto it. Gather the mixture into a rough square and press down gently. Fold it in thirds like a letter and give it a quick press and then repeat again, this will create some “layers”. Divide the dough, forming two rectangles (mine were roughly 3 inches by 5 inches by 1 inch). Wrap the bricks in plastic wrap and transfer them to the refrigerator to chill for at least 2 hours, ideally overnight.

To Make the Pie Crust:

Peel, core, then dice your apples into ¼-inch cubes. In a saucepan, toss them together with lemon juice, lemon zest, brown sugar, granulated sugar, kosher salt, flour, cinnamon, and nutmeg, and cook over medium-low heat for 10 minutes, stirring often. Let cool for 30 minutes or until at room temperature.

To Make the Apple Filling:

Remove the first brick of dough from the fridge. Lightly flour your work surface and roll the dough out into a 9-inch by 12-inch rectangle. Trim any excess using a bench scraper or something similar. Cut into 3-inch by 4-inch rectangles. You should have 9 pieces in total. Place them on a parchment-lined baking sheet, spacing evenly. Repeat this with the other brick, placing the rectangles on another sheet of parchment, right over the existing parchment on the baking sheet.

Stick the sheet in the freezer for about 10 minutes just to firm the dough up a bit. Take the top sheet of parchment off of the sheet. Place 3 tablespoons of apple filling in the middle of each rectangle, leaving a 1/2-inch border. Quickly roll each top rectangle out a little to accommodate the heaping mound of apples. Put each rectangle on top of the apple mound rectangles and press the edges together. Use the tines of a fork (dipped in flour if sticking) to crimp the pieces together and create a nice decoration.

Transfer them to the freezer to chill for about 10 minutes. Meanwhile, preheat the oven to 425 degrees F.

When the hand pies are done chilling and the oven is preheated, brush the tops with the remaining egg wash. Transfer to the oven (I did this in batches) for about 15 to 20 minutes, until the tops are golden brown. Let cool on the sheet to room temperature.

To Assemble the Apple Hand Pies:

In a small bowl, whisk together the icing sugar, heavy cream, butter, vanilla extract, and salt. Spoon into a plastic zip bag.

When the pies are at room temperature, snip off the bottom edge of the plastic bag (a small snip) to create a piping tip. Pipe on icing and enjoy.

To Make the Icing:

I made these for Thanksgiving this year and they were a hit! Absolutely delicious and I love how much easier these are to serve than a traditional apple pie. I’ll definitely be making these again.
