I am one of those rare people that was born with a “salty tooth” instead of the much more common “sweet tooth.”  When it comes to snacking, I’d much rather have a bowl of popcorn than a bowl of ice cream! That being said, I am not against enjoying sweets from time to time as well…especially when they are as healthy as they are delicious. That describes this recipe to a tee! As a matter of fact, I had just eaten dinner and had a piece of fresh peach pie when my daughter-in-law Kaitlyn made this plate of Apple Nachos and despite the fact I was very, very full…I could not stop eating them!

APPLE NACHOS

Gala apples (Fuji

strawberries

blueberries

coconut (shredded)

granola

almonds (sliced)

chocolate chips

coconut oil

Slice the apples nice and thin. Toss the apple slices with some lemon juice or Fruit Fresh to keep them from turning brown.

Slice the strawberries into bite sized pieces.

Melt chocolate chips with the coconut oil in a double boiler or in the microwave.

Start with a layer of apples and then drizzle on some chocolate. Continue this process until you use up all the apple slices.

Add the strawberries and blueberries and some more chocolate.

Top it all off with a sprinkle of granola, coconut, sliced almonds...and a little more chocolate.

Put the nachos in the fridge to chill for about 30 minutes or until the chocolate hardens.

To assemble the nachos:

Sliced fresh apples, with a drizzle of peanut butter and honey, topped with a handful of crunchy chocolate peanut butter granola add up to a plate of Crunchy Apple Nachos.

Combine the peanut butter and honey in a glass bowl and warm it in the microwave. Stir to combine, until it is smooth and pourable.

Slice the apples into wedges and spread the wedges across a large plate or platter. Drizzle the melted peanut butter and honey across the slices and sprinkle with granola. Serve immediately.
