This simple and not-too-sweet loaf is studded with apple and crunchy walnuts. It stays super moist thanks to a good amount of yoghurt in the batter. The loaf can be toasted on the second or third day or sliced and frozen for lunchbox treats.

Apple Walnut Bread

butter (melted, or 1/2 cup neutral-tasting oil)

eggs (at room temperature)

Greek yoghurt (unsweetened)

brown sugar (firmly packed)

all-purpose flour (plain flour)

tsp baking soda (bicarbonate soda)

cinnamon

ginger

walnuts (or pecans)

Preheat oven to 350°F/180°C, combi steam setting. If your oven has variable humidity, use 30% here (if not, don’t worry! Just set to combi steam at the correct temperature and the oven will work out the humidity for you). Grease and line a 9x5 inch (23x13cm) loaf pan with parchment paper and set aside.

Whisk the melted butter with the eggs and yoghurt.

In a separate bowl, whisk together the sugar, flour, baking soda, cinnamon and ginger. Pour in the wet mixture and stir until it’s almost (but not quite!) combined. Stop when there are a few streaks of flour and a few lumps left.

Add the diced apple and nuts and fold through. Make sure the mixture is fully combined with no streaks of flour, but don&#39;t overmix it.

Pour into the lined pan, smooth the top and bake until the loaf is deep golden brown and tests clean with a skewer, about 45 minutes.

Leave to cool in the pan for 15 minutes before turning out onto a rack to cool completely.

Double Apple Walnut Bread

Unsweetened Applesauce

Sugar (plus 1 tbsp for sprinkling)

Brown Sugar (packed)

Eggs

Canola Oil

Plain (or Vanilla) Yogurt

tsp Vanilla Extract

Flour

tsp Baking Powder

tsp Baking Soda

Salt

tsp Cinnamon

Nutmeg

Apple, peeled, cored, and finely diced

Chopped Walnuts

Line a 9- by 5-inch loaf pan with waxed or parchment paper (or grease and flour it), then set it aside. Also grease a mini loaf pan. Heat the oven to 350°F.

Combine the applesauce, sugar, brown sugar, eggs, oil, yogurt, and vanilla extract in a large bowl. Whisk well to blend.

In another large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the dry ingredients with a wooden spoon and pour in the applesauce mixture. Stir just enough to combine; do not overmix. Fold in the apples and walnuts.

Scrape the batter into the prepared pans and smooth the top with a spoon. Evenly sprinkle one tablespoon of sugar over the top. Bake on the center oven rack about 30 to 35 minutes for the mini loaf and 50 to 55 minutes for the large loaf. (Loaf will register 200 degrees F on a cooking thermometer.)

Remove the pan from the oven and put it on a cooling rack for about 15 minutes, then remove the loaf from the pan and place it on the rack to finish cooling.

OPTIONAL GLAZE: Whisk 1/2 cup powdered sugar with 2-3 TBSP HOT water. Drizzle on cooled bread and let set.
