Applesauce Cake

(1 stick) unsalted butter (softened to room temperature)

brown sugar

honey

vanilla extract

cream cheese (softened to room temperature)

unsalted butter (softened)

bourbon (or milk)

kosher salt

Grease

Preheat oven to 350 degrees F with rack in middle. Grease an 8- or 9-inch square cake pan or 8-inch round cake pan with butter or nonstick spray and line the bottom with parchment paper.

Heat

In a small bowl, place the raisins and bourbon. Cover and heat in the microwave for 30 seconds (or you can heat on a small saucepan on the stove). Set aside to cool for at least 15 minutes.

Whisk

In a medium mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt, cinnamon, nutmeg, and cloves.

Beat

In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the butter, brown sugar, honey, and vanilla on high speed until the mixture is pale and fluffy, about 2 to 3 minutes, stopping to scrape down the bowl once or twice as needed.

Add the eggs 1 at a time, beating after each addition until fully incorporated. The batter will look curdled, which is absolutely fine.

Beat in the applesauce, stopping as soon as it is combined.

Reduce the mixer speed to low and gradually add the flour, stopping as soon as it disappears.

Fold

By hand with a rubber spatula, fold in the raisins with their liquid and the pecans.

Bake

Scrape into the prepared pan and smooth the top. Bake for 32 to 38 minutes, until golden brown on top and a toothpick inserted in the center comes out clean. Place the pan on a wire rack and let cool in the pan for 15 minutes.

Cool

With a dull knife, loosen the edges of the cake from the pan, then unmold it and place it on the rack, dome-side up, to finish cooling completely. (I like to invert from the pan onto a plate, then re-invert it back onto the cooling rack). Let cool completely.

Frost

Make the frosting: In the bowl of a standing mixer fitted with the paddle attachment, place the cream cheese, butter, bourbon, vanilla, cinnamon, and salt. Beat on medium speed until smooth. Reduce the mixer speed to low, then slowly add the powdered sugar. Once the sugar has been incorporated, stop and scrape down the sides, then beat a bit more, until combined and creamy. Spread over the top of the cooled cake (I leave the sides bare). Enjoy!

Easy Applesauce Cake

plain Greek yogurt

unsweetened applesauce (or homemade applesauce)

Powdered sugar,

Preheat the oven to 350F. Grease an 8-inch square baking pan.

Put the flour, brown sugar, cinnamon, baking powder, baking soda, and salt into the baking pan. Use a fork to thoroughly mix the ingredients together.

Use your hands to make a hole in the center of the dry ingredients. Into the hole, crack the egg and add the olive oil, yogurt, applesauce, and vanilla. Use a fork to mix the ingredients together until smooth and blended. Smooth the top of the batter with the side of a butter knife.

Bake until the cake is fairly firm when you press lightly at its center and a toothpick inserted in the middle has no wet batter sticking to it, 25 to 30 minutes.

Remove from the oven and leave on the counter to cool completely, 1 hour. Leave the cake in the pan. Dust with powdered sugar. Cut into pieces and use a small spatula to lift them from the pan.

Preheat oven to 350°F.

In a small bowl, pour the milk and place the raisins in the milk. Let them sit while preparing the rest of the cake.

Prepare a 9x13-inch pan by lining the bottom with parchment paper and spraying with nonstick spray.

In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves. Set aside.

In a large bowl, beat together butter and sugars until mixed.

Add the eggs and vanilla and beat until mixed together.

Add the dry ingredients slowly to the butter and sugar mixture and beat just until combined.

Add the applesauce and mix on low just until combined.

Add the raisins and milk mixture and the walnuts and mix until just combined.

Bake for 30 to 35 minutes or until a cake tester inserted in the middle of the cake comes out clean.

Once the cake has cooled, frost with cinnamon cream cheese frosting.

In a large bowl, beat together the cream cheese and butter until smooth.

Add the powdered sugar and beat on low until the powdered sugar is mostly mixed in.

Add cream, vanilla, cinnamon and salt and mix on medium speed until all smooth and creamy.

Once the cake has cooled, use an offset or rubber spatula to frost the top of the cake with cinnamon cream cheese frosting.

Applesauce Cake Recipe

all-purpose flour (- 185 grams)

Applesauce (- unsweetened)

oil (- use oil which has

sugar (or regular white sugar)

vanilla vanilla powder

apple cider vinegar (or regular vinegar or lemon juice)

In a mixing bowl, take applesauce, oil and sugar.

With a wired whisk, stir this mixture so well that the oil is incorporated evenly.

Now add the apple cider vinegar or regular vinegar or lemon juice to this wet mixture.

Preheat the oven for 15 minutes at 180 degrees C/356 degrees F before you begin baking the cake.

Sieve the dry ingredients - all-purpose flour, baking soda, baking powder and a pinch of salt directly in the bowl having the wet ingredients.

Add vanilla powder or scraped vanilla bean or vanilla extract.

Fold the dry ingredients in the wet ingredients lightly. Don't over do.

The batter should feel light.

Pour the batter in the prepared pan.

Bake at 180 degrees C/356 degrees F in a preheated oven for 35 to 40 mins.

Once baked and a toothpick inserted comes out clean, remove the cake from the pan after it cools a bit and then place on a wired rack or tray for the sponge cake to cool down.
