“This is a classic recipe for the simplest jam tart pastry with an almost cake-like crumb. It’s usually made with a blackberry or apricot jam. This tart can be made in a pinch with 250g of your favourite ready-made jam and by simply following the recipe for the pastry crust,” says Emiko Davies. Crostata di marmellata (apricot jam tart) recipe

ripe apricots

sugar

cold unsalted butter

(250 grams) plain (all purpose) flour

whole egg, plus 1 egg, beaten (save the white to brush the pastry)

lemon

Try this delicious fruity dish with tangy Greek yogurt

Apricot yogurt fool

juice of 1 large orange

caster sugar

cinnamon

tub of Greek yogurt

Place the apricots, orange juice, sugar and cinnamon sticks in a pan, cover and cook gently for about 15 mins, until the apricots are very soft. Remove the cinnamon sticks and set aside to cool.

Spoon the yogurt into a bowl and stir in the lemon zest. Fold in most of the cooled apricots, spoon into 4 serving glasses and top with the remaining fruit and any juices.
