10-ingredient vegan arancini with cauliflower rice, sun-dried tomatoes, and basil. Inspired by an Italian dish that's typically cooked rice stuffed with cheese and fried, only my version is healthier and veganized!

Sun-Dried Tomato &amp; Basil Arancini (Vegan)

Preheat oven to 375 degrees F (190 C) and line a baking sheet with foil.

In a large skillet over medium heat, sauté cauliflower rice and garlic in half the olive oil (1 Tbsp as original recipe is written // adjust if altering batch size) for 5 minutes, with a lid on, stirring frequently. Set aside.

Add flax egg to blender or food processor. Wait 5 minutes.

Add sun-dried tomatoes, basil, oregano, vegan parmesan cheese, and panko bread crumbs, and pulse/mix to combine.

Add cauliflower rice to food processor or blender, along with salt and pepper and remaining olive oil (1 Tbsp as original recipe is written // adjust if altering batch size). Pulse/mix a few more times and then transfer to a mixing bowl to avoid getting the mixture too paste-like.

Taste and adjust seasonings as needed. Add more bread crumbs and/or vegan parmesan cheese if the mixture feels too wet. It should be moldable when squeezed together.

Transfer mixture to refrigerator to chill for 30 minutes, or freezer for 15 minutes. At this time, mix together panko bread crumbs and vegan parmesan cheese in a shallow bowl. Set aside.

Once chilled, use a Tablespoon or cookie scoop (I like this one from Amazon) to scoop out rounded Tablespoon amounts of the arancini mixture.

Carefully form into balls by resting the arancini in your palm and using your other hand's fingers to gently roll until a ball is formed. They are fragile, so work carefully. There should be 13-14 total (amount as original recipe is written // adjust if altering batch size).

Coat arancini one at a time in the panko-vegan parmesan mixture, then set aside on a baking sheet.

Heat a large skillet over medium heat. Once hot, add 1-2 Tbsp oil and brown 6-7 arancini at a time for 4-5 minutes total, rolling with a spoon or fork to brown on all sides. Turn down heat if browning too quickly.

Once all are browned, place back on a baking sheet and bake in a 375-degree F (190 C) oven for 15-20 minutes. In the meantime, prepare/heat sauce (optional) and any other desired toppings or sides.

Let arancini cool for 5 minutes, then serve with marinara and additional vegan parmesan cheese. These are best eaten with a fork as they are tender.

Leftovers keep for 2-3 days in the refrigerator, though best when fresh. Reheat in the microwave or in a 375-degree F (190 C) oven until warmed through.

Adapt these arancini rice balls to your liking: add fresh herbs, sundried tomatoes or chopped ham. You can also make the balls from leftover cold risotto

Heat the oil and butter in a <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a> until foamy. Add the onion and a pinch of salt and fry gently over a low heat for 15 mins, or until softened and translucent. Add the garlic and cook for another min. Stir in the rice and cook for a further min, then pour in the wine. Bring to the boil and cook until the liquid is reduced by half. Pour in half the stock and simmer, stirring continuously, until most of the liquid is absorbed. Add the remaining stock a ladleful at a time as the rice absorbs the liquid, stirring, until the rice is cooked through (this should take about 20-25 mins). Stir in the parmesan and lemon and season to taste. Spread the risotto out into a lipped tray and leave to cool to room temperature.

Scoop the cooled risotto into 18 equal portions – they should be slightly larger than a golf ball. Flatten a risotto ball in your hand and put a piece of the mozzarella in the centre, then enclose the cheese in the rice and roll it into a ball. Repeat with the remaining risotto balls.

Put the flour, eggs and breadcrumbs into three separate shallow bowls. Dip each prepared risotto ball into the flour, followed by the eggs and finally, the breadcrumbs. Transfer to a tray and set aside.

Half-fill a large, heavy-based saucepan with vegetable oil and heat over medium-low until it reads 170C on a cooking thermometer or until a piece of bread turns golden brown in the oil within 45 seconds. Lower the risotto balls into the oil in batches and cook for 8-10 mins, or until golden brown and melted in the centre. Set aside on a tray lined with a clean kitchen towel.

Eat the arancini warm, or serve with a basic tomato sauce for dipping.

Make the risotto by adding the rice to the heated oil in a large saute pan, and stirring quickly for one or two minutes. Quickly add the white wine while stirring. With the heat on medium high, begin adding the chicken stock a little at a time, and continuously stirring, until all the stock has been used and the rice is cooked, yet still al dente (I have a risotto recipe here on my blog). Taste; adding salt if necessary. Remove from heat and set aside to cool.

Place some rice in your hand and flatten it into your cupped hand, but don’t make it too thin, or the filling will ooze out. Place a piece of mozzarella, and/or a little tomato sauce (and peas, if using) in the center of the cupped rice. Next, close the rice around the filling and shape into a ball.

Heat some oil in a deep fryer, pot or wok until it is very hot. Add the arancini, and cook quickly, turning often so they don’t brown too much on one side. If serving immediately, fry for a few minutes, so the cheese will melt in the center. Remove from oil and place on paper towel lined plate or tray. (If you’d like to serve them at a later time, remove them quickly after just browning; then, just before serving, place them on a baking sheet and re-heat in the oven at 400ºF for 5 to 10 minutes.)

The BEST Way To Reheat Arancini

Preheat the oven to 350°F (180°C).

Microwave the arancini on full power for 10-20 seconds (optional but recommended for larger arancini).

Place the arancini straight on a rack in the oven (don’t use a baking tray).

Heat the arancini for 5-10 minutes until the whole ball is heated through. Larger arancini will need longer than small ones. If you skip the microwave step, you’ll need to add a few minutes to reheating time. Frozen arancini will need 15-20 mins.

These arancini flavored with spinach and sun-dried tomato are crispy and golden on the outside, and filled with mozzarella on the inside!

To prepare the risotto, place a heavy-bottom pan over medium-high heat, and add in the butter; once melted, add in the diced onion and saute for a few minutes just until softened; add in the garlic and stir.

Add in the arborio rice, plus a small pinch of salt and pepper, and stir to combine and toast; add in the white wine, and allow it to reduce for a moment.

Once reduced, begin adding about a ladle and a half of the hot chicken stock into the rice in increments, stirring for a moment to incorporate, allowing the stock to absorb.

Add more stock once the stock is almost completely absorbed, stirring the risotto occasionally to create a creamy texture, using up all the stock until the rice is soft yet still has a slight bite to it (this should take about 25-30 minutes).

Once the risotto is cooked, turn off the heat and stir in the parmesan cheese, the chopped baby spinach leaves and sun-dried tomatoes, plus the parsley (and optional pinch of red pepper flakes).

Line a baking sheet with parchment paper and pour the risotto onto the parchment, smoothing and spreading it to cool quickly (I place mine into the fridge for about 20-30 minutes to cool quicker).

Once the risotto is cooled, using a 1 1/2 tablespoon-size scoop (I use my cookie scoop), scoop out portions (you should get 25); then, press a tiny cube of mozzarella into the center of each, enclosing it in the risotto; roll each, like a meatball, into a ball-shape.

Dip each ball into the flour, then the whisked egg, then the panko breadcrumbs.

Fill a large pan or a medium pot with about 3” of vegetable oil, or enough so that the bites can be fairly submerged when fried, and slowly bring to 365°; once the oil is hot, add a batch of arancini in and fry until golden-brown on all sides, about 2 minutes; drain on a wire rack, and repeat until all arancini balls are fried.

Serve warm or room temp with a little toothpick for convenience, on their own or with marinara sauce on the side.

Parmesan arancini balls is a crowd-pleasing finger food made with cooked risotto, parmesan cheese, spices, and breadcrumbs.

Parmesan Arancini Balls

In a large bowl, combine the cooked risotto, ¾ cup parmesan cheese, salt, garlic powder, Italian seasoning, and red pepper flakes. 

Roll the risotto into 1” balls, making sure to pack them together well so they don’t fall apart. 

Prepare your breading station by placing the flour, eggs, and breadcrumbs each in their own medium-sized bowl. Whisk the eggs until they are smooth and uniform. 

Dip each risotto ball (one at a time) into the flour, followed by the egg, and then the breadcrumbs. Repeat with the remaining arancini. 

Fill a heavy-bottomed pot or Dutch oven with at least 2” of vegetable oil and heat it over medium until it reaches 365ºF. 

Carefully lower 3-4 risotto balls into the oil and cook them for 1-2 minutes, or until they are golden brown. 

Remove the arancini to a paper towel and repeat until all of the arancini have been fried. 

Serve immediately, garnished with the remaining grated parmesan and fresh parsley. 

In a large bowl, whisk together all of the ingredients. Store in an airtight container in the fridge until ready to serve.

Arancine – Arancini Recipe

breadcrumbs (7 oz)

g Parmigiano Reggiano (3.5 oz)

kg Carnaroli rice (4 cups)

Lt. water (0.8 gal)

g butter (10 tbsp)

35 g salt (2 tbsp)

saffron

tbsp extra virgin olive oil

celery

bay leaves

cloves

g pork (10 oz)

300 g minced beef (10 oz)

white wine

tomato paste

250 g grated Parmiggiano Reggiano or Caciocavallo cheese (8.8 oz)

200 g frozen peas (7 oz)

salt and pepper

In a saucepan, mix the water with the saffron, salt, and butter (cut into pieces).

When the saffron water comes to a boil, add the rice, lower the heat and cook until the broth is completely absorbed, stirring occasionally.

In a large pan, put onions, carrots, and celery finely chopped with olive oil.

Let them fry for a few minutes, and add the pork and beef, cook for 10 minutes.

When the meat is browned, turn up the heat, and deglaze with white wine.

Let it evaporate, add the bay leaf and cloves then peas and tomato paste dissolved in a glass of lukewarm water.

Add two more glasses of water, salt, and pepper, and cook over low heat for about an hour and a half.

After it cools, remove the bay leaves, and when everything is warm add the cheese and stir.

Once the rice has completely cooled (it will take at least a couple of hours), you can form the balls, to help form the balls keep a bowl filled with water near so you can wet your hand (makes it easier to handle the rice).

Place some rice in your hand and flatten it into your cupped hand.

Add a few cubes of mozzarella add the ragu meat filling and a teaspoon of grated Parmigiano Reggiano cheese.

Form a ball, as big as an orange, compacting it well, to do this it is best to keep the hands well wet.

Dip the rice ball in the beaten egg, or in a batter made from flour and water, and then roll them in the breadcrumbs.

Dip arancine/i inside the oil, being careful not to burn yourself.

When golden, transfer to a plate lined with paper towels to sop up any excess oil.

These baked risotto balls are spectacular for entertaining!Leftover risotto is wrapped around cheese, rolled in bread crumbs and baked until golden brown.
