Moro de Habichuelas Recipe (Dominican Rice and Beans): This is one of the most common dishes on the Dominican table. We are presenting here a generic moro version that you can modify by adding other types of beans or legumes.

¼ cup of diced cubanela ((cubanelle) peppers)

Sauteing

Sauteing seasonings: Heat half the oil (2.5 Tbsp) in an cast aluminum or cast iron pot over low heat and add cilantro, garlic, thyme, celery, olives, oregano, cubanela, capers. Cook and stir for a minute, or until the ingredients release their aroma. Stir in the tomato sauce.  Add beans, also while stirring, and season with salt.

Adding water

Adding water: Once heated through, add water and bring to the boil (try the mixture and add salt to taste before proceeding, bear in mind that the rice will absorb some of the salt, so don&#39;t low-ball it).

Cooking rice

Cooking rice: Once the water reaches a rolling boil stir in the rice and simmer stirring frequently to avoid excessive sticking. Make sure to remove the rice that sticks to the bottom.When the water has evaporated cover with a tight-fitting lid and simmer over very low heat for 15 minutes. After the 15 minutes have passed uncover, add the remaining oil, and stir.Cover again another 5 minutes. After this the rice should be firm but tender inside. If necessary, cover and leave another 5 minutes over very low heat (if at this point it looks too dry add 1/4 cup of boiling water before stirring and covering.

Serving

Serving: Serve with meat, (or seafood), a side dish, and salad (see notes).

Receta de arroz con frijoles: ¡Sabor tradicional en tu plato!

200 gr de arroz bomba La Fallera

225 gr de frijoles

pimiento verde

dientes de ajo

cebolla

hoja de laurel

cdta de orégano

cdta de pimentón dulce

cdta de comino

ml de vinagre de jerez

cdta de azúcar

Cilantro fresco

Aceite de oliva virgen extra (Aove)

Antes de comenzar con la preparación de esta receta, es esencial tener todos los ingredientes organizados y a la mano. La frescura de los ingredientes y la preparación adecuada son clave para lograr un plato delicioso.

Poner los frijoles en remojo

Lo primero que debes hacer es poner en remojo los frijoles la noche anterior en un bol. Deja que se hidraten durante aproximadamente 12 horas. Si no tienes tiempo para esperar, también puedes optar por comprar frijoles cocidos enlatados.

En una olla con aceite de oliva virgen extra, agrega la mitad de la cebolla cortada en dados, medio pimiento verde, los dientes de ajo laminados y la hoja de laurel. Sofríelos hasta que estén dorados y fragantes.

Cocinar los frijoles
Luego, añade los frijoles y agua suficiente, y cocina a fuego medio durante unos 30 minutos hasta que los frijoles estén tiernos.

Mientras los frijoles se cocinan, en una sartén con aceite de oliva virgen extra, agrega la otra mitad de la cebolla cortada en dados y el resto del pimiento verde. Sofríe hasta que estén tiernos y luego añade las especias (orégano, pimentón dulce, comino) y el azúcar. Integra bien los sabores.

Una vez que los frijoles estén cocidos, vierte el sofrito en la olla con los frijoles. Mezcla todo cuidadosamente y añade el vinagre de jerez. Cocina por 5 minutos adicionales para que los sabores se mezclen.

Sirve en un plato, vierte los frijoles por encima, añade un poco de cilantro fresco y ¡a disfrutar!
