Mediterranean Roasted Artichoke Recipe

To clean artichokes, first, cut off the stem/stalk. Peel off the tough outer layers by hand. When you reach the softer layers, use a serrated knife to cut off about 3/4 inches from the top. Now, cut artichoke in half length-wise. Then, using a spoon, remove the fuzzy choke on the inside.

As you clean the inside of each artichoke half, immediately add 1/2 tsp lemon juice to cover the surface to prevent the artichoke from discoloring.

On a large baking sheet, place each artichoke half in a piece of lightly-oiled foil paper that is large enough to fold around.

Season artichokes with salt and pepper, and nestle 1 garlic clove in the center of each artichoke half. Drizzle generously with quality olive oil (it's okay if some of the olive oil pools in the center or overflows onto the foil). Close the foil around artichokes.

Roast in the 400 degrees F heated-oven for 40 minutes.

Carefully open the foil pouches using tongs. Remove the roasted garlic from the center of artichoke, and close the foils back until ready to serve. Let garlic cool.

In the bowl of a small food processor, add the roasted garlic with the remaining vinaigrette ingredients. Pulse until smooth.

Remove the artichokes from foil. Arrange on a serving platter, generously drizzle the roasted garlic-dill vinaigrette. Top with shallots, capers and crumbled feta cheese. Enjoy!

Trim any excess stem from the artichoke. If the artichoke&#39;s outer leaves have tiny thorns, trim them with scissors. How to Cook Artichokes in the Microwave

(80 milliliters) lemon juice

thyme

olive oil

gorgonzola dolce

pure (thin) cream

good-quality gnocchi

mint and flat-leaf parsley leaves

Serve this cheesy Tuscan Artichoke Stuffed Shells made with a meat sauce. for dinner.  Stuffed jumbo shells are filled with ricotta cheese, mozzarella cheese and chopped artichoke hearts.

Tuscan Artichoke Stuffed Shells

Pasta Sauce (I used Marinara with Parmigiano-Reggiano Cheese)

ricotta cheese

artichokes

beef (drained well)

onion

mozzarella cheese

salt

black pepper

dry parsley flakes

egg (slightly beaten)

mozzarella cheese (divided)

Mix the ricotta, egg, salt, pepper and parsley in a large bowl.

Fold

Fold in the artichoke pieces and 1/2 cup shredded mozzarella cheese.

Chill

Boil

Boil the jumbo pasta shells following the directions on the box. Drain well and rinse with cold water. Set aside.

Brown

Brown the ground beef in a skillet. Add the diced onion, minced garlic and olive oil. Saute until the onion is translucent.

Pour

Pour the jar of Bertolli Reserva sauce into the skillet and heat through. Remove from heat.

Spread

Spread 1 cup of sauce into the bottom of a 9 x 13 baking dish.

Fill

Fill each jumbo shell with about 2 tablespoons of the ricotta filling and place seam up into the baking dish. Repeat until you run out of ricotta filling or pasta shells.

Spread the remaining sauce over the top of the stuffed pasta shells.

Cover

Cover the baking dish with aluminum foil.

Bake

Bake in a preheated 375 F. degree oven for about 40-45 minutes or until the ricotta filling is heated through and the sauce is bubbling.

Sprinkle

Remove baking dish from the oven and sprinkle 1 to 1/2 cups of the remaining shredded mozzarella cheese over the top of the shells.

Melts

Recover with aluminum foil and return to the oven for 10 more minutes or until the cheese is melted.

Serve

Serve with your favorite Tuscan style tomato salad.
