lemon arugula pasta + parmesan crusted chicken

flour ½ c (60 g)

garlic powder ½ tsp

oregano ½ tsp

panko breadcrumbs 1 c (80 g)

½ c (45 g)

olive oil 2 tbsp

lemon arugula pastaspaghetti 8 oz (220 g)

butter 3 tbsp (40 g)

minced garlic 2 cloves

lemon (zest + juice) 1 medium

¼ c (20 g)

prosciutto 4 slices (50 g)

arugula 2 handfuls

salt

You can cook the pasta and while the veggies are in the oven for this easy roasted romanesco arugula pasta with lemon and garlic.

Roasted Romanesco Arugula Pasta Recipe

olive oil

black pepper

baby arugula (about 2 big handfuls)

pecorino cheese

walnuts

parsley

Preheat the oven to 425 degrees F.

In a large bowl, toss the romanesco with 2 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon black pepper.

Spread the romanesco into a single layer on two sheet pans. Roast for 20-22 minutes until it is brown at the edges. Toss the florets halfway through roasting and rotate the sheet pans in the oven.

While the romanesco is roasting, cook the pasta until al dente according the package instructions. Reserve 1/2 cup pasta water and drain in a colander.

Heat 1 tablespoon olive oil in a large skillet or sauté pan over medium high heat.

Sauté the garlic, 1/2 teaspoon salt and 1/2 teaspoon black pepper until fragrant, about 30 seconds.

Stir the pasta into the lemon-garlic mixture.

Then stir in the roasted romanesco, lemon juice, arugula, Pecorino, walnuts and parsley.

This arugula pasta makes a super easy weeknight meal that&#39;s luscious, fresh, full of savory flavors and absolutely delicious.

Arugula Pasta

220 grams) pasta

(80 grams) baby arugula, washed

(40 grams) sun dried tomatoes, drained

(30 grams) cashews

garlic clove, sliced

cheese

⅛ tsp black pepper

(60 ml) extra virgin olive oil

(60 ml) pasta cooking water

Cook pasta in plenty of boiling salty water until al dente.

When the pasta is nearly done, scoop out 1 cup of pasta water and set aside.

Finally, drain the pasta and return it to the pot.

While the pasta is cooking, place arugula, parmesan, garlic, cashews, tomatoes, salt and pepper in the food processor. Give a quick blitz just for a few seconds, until the mixture resembles a coarse pesto-like consistency.

Scrape down size as needed, add extra virgin olive oil and pasta cooking water (use ¼ cup of the water you reserved) to the mixture and give another quick whizz. Taste and adjust the seasoning.

Add the arugula pesto sauce to the drained pasta and toss well to combine. Stir in some pasta water as much as needed until you get a moist and juicy consistency.

Divide into 4 bowl and serve with freshly grated parmesan cheese and a drizzle of extra virgin olive oil if you wish. Enjoy.

I cook with arugula a LOT and make pesto often too. This is an unusual and delicious recipe.  I think it's the sundried tomatoes that create a unique flavor. I did add some basil I wanted to use up. 
A little bit of lemon or sumac at serving time is good too. 
Will definitely make again.
