This Asian style mango cake is made up of fluffy cotton soft sponge cake, fresh and juicy mango, all topped with a light vanilla whipped cream

Mango Cake Recipe

Milk (3 tbsp)

Vegetable oil (2 tbsp 1 tsp)

Cornstarch (1/3 cup)

All-purpose flour (40 g)

White sugar (1/3 cup)

salt

Thickened cream

White sugar (1/2 cup)

tsp Vanilla extract

Line the bottom of a 6-inch cake tin with parchment paper

In a medium-sized bowl whisk the egg yolks, milk, vegetable oil and cornstarch together

Sift in the flour and salt, and whisk until just combined

In the bowl of a stand mixer fitted with a whisk attachment whip the egg whites with sugar until stiff peaks

In three additions fold the meringue into the egg yolk mixture, being careful not to deflate the bubbles

Fill a larger baking tray with 1cm of boiling water and place the cake tin in the tray

Bake for 60 minutes, or until it springs back when touched

Once cooled run a knife around the edge of the cake tin and invert the pan

Wrap in cling wrap and place in the fridge until assembly

Cotton Sponge Cake

Combine the cream, sugar, and vanilla extract in the bowl of a stand mixer fitted with a whisk attachment and whisk until medium stiff peaks.

Vanilla Whipped Cream

Peel the mangoes and cut one mango into 6 large cubes

Place a cake layer on a turn table and spread over a thin layer of cream

Place the thinly sliced pieces of mango over the cream and top with more cream

Repeat and cover with the final sponge layer

Using a palette knife spread cover the cake in a thin layer of cream, spinning the turntable as you go to create a smooth finish

Place the remaining cream in a piping bag fitted with a star tip and pipe a border around the edge of the cake

Decorate with the cubes of mango and place in the fridge to set for 1-2 hours before enjoying

This is an amazing recipe! I made it for my dad’s birthday and everyone loved it.

I don't usually leave comments and reviews but I tried this cake recipe and it is absolutely perfect! My parents are super picky with sugar levels and they were very happy with this one. They said it's even better than the ones in the Chinese bakeries!! Thank you so much for this recipe. It's a definite keeper.

So glad I followed you after watching Zumbo's Just Desserts! This sponge cake recipe truly is the one that I have been looking for, after too many sponge trials!! Such a good recipe and I'm so excited to try all your other recipes!!! A couple of questions:
1. How high is your 6-inch cake pan? It looked like too much batter to put into my 3-inch high 6-inch pan, so I baked it in an 8-inch pan as that's the next size I have. It came out great but will scale up next time for more height. But yeah wanted to know if the 3-inch height is enough for the cake to rise?
2. Does this recipe work for sheet cakes? I like to make mini cakes sometimes and was wondering if I could bake this in a flat tray to chomp out little circles!

This fresh fruit cake is bursting with sweet, juicy seasonal fruit. It&#39;s made with fluffy whipped cream, layers of soft sponge cake, and any fruit of your choice! This cake is just like the beautiful Asian fruit cakes sold in Korean, Chinese, and Japanese bakeries.

Fresh Fruit Cake

cake flour

eggs (room temperature)

sugar

butter (melted)

vanilla extract

water

heavy whipping cream (cold)

sugar (adjust to taste)

fresh fruit (strawberries, raspberries, blueberries, blackberries, kiwi, mandarin oranges)

Preheat oven

Preheat the oven to 350°F. Line the bottom and sides of the cake pan with parchment paper.

Whip Eggs

Whip Eggs: In a large heat-proof bowl, add the eggs, sugar, vanilla, and salt. Place this bowl inside a larger bowl that&#39;s been filled with hot water (bain-marie). Using a hand mixer, beat the eggs on high speed until soft, fluffy, and pale yellow ribbons form, about 8 to 10 minutes. Replace the hot water halfway through as it cools down. See Note 1.

Add flour

Add Flour: Sift in the flour in three parts, gently folding after each time.

Add butter

Add Butter: To help incorporate the butter, mix 3 heaping spoonfuls of the batter into the warmed, melted butter. Next, gently fold the butter mixture into the batter. See Note 2.

Bake

Bake: Pour the batter into your cake pan and bake at 350°F until a toothpick inserted in the center comes out clean. For one 9-inch round pan, about 25 minutes. For two 6-inch round pans, about 18 minutes.

Cool

Cool: Remove all parchment paper and allow it to cool completely on a cooling rack.

For the Cake:

Whipped Cream

Using a whisk attachment, beat the heavy whipping cream and powdered sugar together until light and fluffy.

For the Whipped Cream:

Cake Syrup

Cake syrup: Make cake syrup by dissolving the sugar in hot water. Set aside.

Fill and Assemble

Fill: Slice the cake into even layers using a leveler. Working with the bottom cake layer, brush on a layer of cake syrup, then add a thin layer of whipped cream. Top with sliced fruit, being careful not to overfill. Then top with another thin layer of whipped cream. Repeat these steps for the next cake layer. See Notes 3 and 4.

Decorate and Serve

Decorate: Decorate the top layer with more fruit and whipped cream. Serve and enjoy!

Assemble:

Made this for a baby shower/birthday and everyone LOVEDDDD it and completely cleared it off the cake stand. It was for family and friends that tend to say American desserts are too sweet. They liked it so much they wanted me to make it again for the following weekend. The Bain-Marie method is intimidating but I was shocked how perfectly the cake came out of the oven. Definitely saving this recipe to make again.

This cake turned out beautifully! I was nervous about deflating the batter and the higher difficulty of the recipe but I had no issues. I used margarine as I had no butter but I don’t think it made much of a difference. Made for a delicious birthday cake for my mom!
