Easy Asparagus Casserole

asparagus,

mayonnaise

cheddar cheese, grated

onion, diced

flour

garlic,

milk

salt and pepper

Ritz crackers

Place the asparagus, mayo, and cheese together in a large bowl.

In a skillet over medium heat, add the onion with a drizzle of oil. Saute the onion for about 5 minutes until soft and slightly browned. Sprinkle the garlic and flour all over the onion mixture. Stir to create a roux and let the flour cook for a minute or two.

Very slowly pour the milk into the skillet, stirring as you go to incorporate the milk into the flour mixture. Let the milk sauce come to a bubble. Sprinkle with salt and pepper.

When the milk sauce is slightly thick, pour it into the bowl with the asparagus and other ingredients. Stir to mix everything together, and pour the mixture into a baking dish, 9x13 or similar. Sprinkle the crushed crackers over the casserole.

Bake the asparagus casserole at 375F for 40-50 minutes or until the asparagus is just tender and the cheese is bubbly. Broil the top for one minute if you'd like to brown the crackers.

A favorite easy asparagus casserole that is perfect for Easter dinner, Christmas dinner, or any time you want to make a cheesy vegetable side dish! This casserole has just a few ingredients and is completely foolproof.

Asparagus Casserole in a creamy Alfredo sauce topped with crisp cheesy bread crumbs. This asparagus bake is easy and impressive.

Asparagus Casserole

asparagus (trimmed)

unsalted butter (divided, plus more to grease casserole)

Tbsp all-purpose flour

half and half ((or equal parts milk and heavy cream))

tsp garlic salt

tsp black pepper

parmesan cheese (divided)

bread crumbs

Preheat Oven to 400˚F with the rack in the center. Butter a 9x13 casserole dish. Arrange trimmed asparagus in prepared casserole dish, packing it down for a fairly flat and even surface.

Place a saucepan over medium heat. Melt in 3 Tbsp butter then add 2 1/2 Tbsp flour and whisk constantly for 3 minutes or until butter just starts to turn golden in color. Whisk in 2 cups half and half, 2 tsp garlic salt and 1/4 tsp black pepper. Whisk until sauce just starts to thicken then remove from heat. Sprinkle in 1/2 cup parmesan and whisk until cheese is melted and incorporated.

Pour sauce evenly over the asparagus, leaving about 1" space on the long sides of the casserole dish.&nbsp;Bake uncovered at 400˚F for 15-18 minutes (depending on thickness of asparagus), or until asparagus reaches desired tenderness.

While the casserole is baking, make the topping: in a small mixing bowl, melt 1 Tbsp butter. Mix in 1/2 cup bread crumbs, stirring until evenly moistened, then stir in 1/2 cup remaining parmesan cheese.&nbsp;Halfway through baking, sprinkle the bread crumb topping evenly over the casserole then return it to the oven to finish baking.

When asparagus has reached desired doneness, set oven to broil for 2-3 minutes or until bread crumbs are golden brown.&nbsp;Remove from oven and serve.

How To Cook Asparagus Casserole | Easy Side Dish

🧀🙌💛 Smothered in a rich cream sauce, and layered with Parmesan and mozzarella cheeses, along with perfectly crispy breadcrumbs, this will be your new FAVORITE way to eat asparagus! Makes a wonderful holiday side dish from Thanksgiving to Easter, but it’s FAST and EASY enough so you can serve it at weeknight dinners!

unsalted butter (divided)

garlic powder

salt (or

black pepper

mozzarella cheese

panko breadcrumbs (Italian breadcrumbs may be substituted)

Grease

Preheat oven to 400F and spray a ceramic or glass 9x13-inch baking or casserole dish (or 4-quart rectangular casserole dish) with cooking spray and place the asparagus inside; set aside.

Melt

To a small saucepan, add 3 tablespoons butter, and heat over medium-high heat to melt; swirl the pan to encourage melting.

Whisk

Add the flour, garlic powder, salt, pepper, and whisk to combine. Whisk nearly constantly for about 1-2 minutes, or until the mixture has thickened nicely. Tip - This is called making a roux. Do not shortchange this step because this is what will help your cream sauce to thicken up later on since there&#39;s no canned or condensed soup being used.

Slowly pour in the heavy cream, whisking constantly until the mixture reaches a gentle simmer. Allow mixture to simmer for about 3-5 minutes, or until nicely thickened; whisk nearly constantly while it simmers. Tip - Do not allow the mixture come up to a rapid or fast boil as this excessive heat could cause the cream to &#39;break&#39; at which point you&#39;d have to start over. Keep the simmer controlled.

Remove the saucepan from the heat, add 1/2 cup Parmesan cheese, and whisk to incorporate and keep whisking until smooth.

Pour

Pour the sauce evenly over the asparagus; set aside.

To a medium microwave-safe bowl, add the remaining 2 tablespoons butter, and heat on high power to melt, about 30 seconds.

Combine

Toss

Add the remaining 1/2 cup Parm and all the mozzarella cheese and stir or toss to combine, noting that the mixture will be crumbly and you won&#39;t be able to stir it smooth, which is the intention since this is the topping.

Bake

Evenly sprinkle the topping mixture over the saucy asparagus and bake for about 15-20 minutes, or until the topping is as golden browned as desired. Tips - I like to rotate my baking dish once midway through baking since even the fanciest ovens still bake a bit unevenly and this helps to ensure even browning. Bake until done in your oven. Baking time will depend a bit on your oven, climate, baking or casserole dish used (metal bakes faster than ceramic or glass) and the size/diameter of your asparagus. Serve immediately. Recipe will keep airtight in the fridge for up to 4-5 days, reheat leftovers gently in the microwave. Note that the crispy topping will not stay crispy on any leftovers, and there&#39;s nothing to do to prevent it.
