Spicy Cajun Asparagus and Sausage Skillet

Asparagus

Cups Water

Red Potatoes (Cubed)

Carrots (Sliced into 1/4" pieces)

Green Bell Pepper (Diced)

Medium Yellow Onion (Diced)

Package/14 oz Smoked Sausage (Sliced into 1/2" pieces)

Tsp Cajun Seasoning

Tsp Salt

Tsp Black Pepper

Prepare all ingredients by dicing and chopping all vegetables and the sausage. Bring the 2 cups of water to a boil in a medium sized pan.

Add chopped asparagus to boiling water and set timer for 5 minutes. While asparagus is boiling, add oil to a skillet over medium heat and add potatoes and add potatoes and carrots in a single layer.

Once asparagus has boiled for 5 minutes and turned bright green drain pot and set aside. Allow potatoes and carrots to cook for 15 minutes or until they begin to soften.&nbsp;

Push potatoes and carrots to the edges of the skillet and add onions, peppers, and sausage to skillet. Add seasoning to skillet and cook for an additional 10 minutes or until onions have softened and sausage has browned.&nbsp;

Add asparagus to skillet to and throughly mix all ingredients so they have all been evenly coated in the seasoning. Serve warm.

This Asparagus Skillet is a delightful combination of sweet potatoes, fresh corn, asparagus, and bacon with a drizzle of balsamic.

Asparagus, Bacon, Corn, and Sweet Potato Skillet

black pepper (adjust to taste)

balsamic vinegar

In a glass bowl, combine the sweet potatoes and water. Microwave the sweet potato pieces for 2 minutes, stir and microwave another 2 minutes. Stir again and check tenderness. They should be fork tender, but still just a bit crisp. Cook 1 more minute only if necessary. Set aside.

In a very large skillet, over medium-high heat, cook the bacon pieces and then remove to a paper towel. Add the softened potatoes to the bacon grease left in the skillet and toss quickly to coat each piece. Season with salt and pepper and cook for about 2-3 minutes, stirring occasionally.

Add the asparagus and stir to combine. Cook another 3-4 minutes, until the asparagus is almost softened. Add the corn, toss well to coat, and cook 3-4 minutes more, stirring frequently.

Add the bacon back into the skillet and stir to combine. Season to taste with salt and pepper and remove from the heat. Drizzle with balsamic and stir again. Serve hot and Enjoy!
