I have made this recipe and its good. But the next time I tweaked it. I actually prefer more texture to the soup. I suggest leaving some of the pieces of asparagus (2 cups) apposed to pureeing all of it. My modifications are in a separate pot; 1/2 cup baby carrots cut to 1/2". 1/4 cup celery chopped. 1/4 cup diced yellow onion. Saute'd in butter with the chopped garlic clove. While veggies are still firm add (2 c) chopped asparagus and a 1/2 cup of broth. (simmer w/ lid 8 mins). 1 can of Cream of Mushroom added to the puree as well as a cup of broth. Add veggies back to creamed mixture. Serve topped with shredded cheese and dust with dill. I LOVE asparagus!

Probably three 3rd recipe I've made from this site.  Beautiful color and texture.   I'd made a corned beef a couple of days ago and  added that to the garlic butter. Didn't have fresh herbs so added some thyme and dill.  Cooked as recipe said,  but had to run an errand so I turned it off, reheated and totally loved this.

Super easy and really tasty! I was roasting some asparagus for dinner and decided to use the tougher ends for this recipe rather than throwing them away. I had enough to make a half-batch of this soup, and was really pleased with the outcome.

The simple step of sauteing the asparagus prior to adding the broth to simmer gave such a depth of flavor. Quick to make and delish! I will make this again.

First time making asparagus soup.  This recipe is terrific.  So quick and easy. I only Used a lb. of veggie but turned out great.  Not sure if I will use 2 lbs.  Everything else the same.  Just right amount for two people..

This turned our really good. I didnt have any dill and it still tasted great. I used better than bullion roasted garlic giving the soup added flavor. I also reduced the portion for two people.

This is the first recipe I have made on this site.  I thought it was yummy.  Three out of three family members who tried it loved it.  That includes me and two children age 11 and 9.  Other children would not touch it.  Their loss... more for us.  The only set back for me was that it did not end up being "the prettiest color"... I may have simmered it for too long.  I would reccomend sticking with 10mins and not more.  Asparagus is one of my favorite spring vegetables, so I will probably be making this again.

Good but too healthy,We did 3 Lb. Try, using kitchen sheers, cut up 1 piece of bacon and saute with the butter. Continue as directed... Then when you add the cream put in 1/4 to 1/2 C cheese.  Add some dried dill during cook. A little extra kosher salt and coarse pepper.. -
Awsome!!!  Dont worry your Dr needs some reason why you died, 50 years from now !!! Im 68, had heart cath.  No blockage and i eat meat, the fat, lots of salads and vegies.  Kinda like a cave man.  Dr says its unusual.  Haaaa. My wife will attest.

Cream of Asparagus Soup Recipe

Preheat the oven to 375 degrees

Start by roasting the asparagus - snap off the woody ends and reserve for vegetable stock or another use. Lay the asparagus spears on a cookie sheet and drizzle with 2 tablespoons olive oil, sprinkle with salt &amp; pepper. Put in the preheated oven for 15 minute. Remove from oven, allow to cool. When cool, cut into 1/4" pieces.

While the asparagus is cooking, brown the bacon in a large stockpot over medium heat. Remove when crispy, reserving the drippings.&nbsp;

Next, add the potatoes, onions, celery and Parmesan cheese rind (if using shredded parmesan add this after adding the stock) and season with black pepper. Cook the vegetables for about 5 minutes, they will be slightly browned.

Add in the stock and about 3/4 of the chopped asparagus. (Reserve adding salt and remaining asparagus until the end of the cooking process.) Increase the heat and bring it to a boil. Reduce it to a simmer and continue cooking until the potatoes are fork tender, about 15 minutes. Turn off the heat.

Remove the remains of the Parmesan rind (it's job is done!) If you're using shredded parmesan, add it now and stir until incorporated.

Using a submersion or stand blender, blend the soup until it is creamy.&nbsp;

When the consistency is to your liking, taste &amp; adjust seasonings, add salt if needed.

Garnish with reserved asparagus and bacon crumbles. A drizzle of good olive oil adds so much flavor!

This creamy asparagus soup is the best way to celebrate spring. It&#039;s light, healthy, and made without cream—the perfect vegetarian meal!

Saute the veggies. Heat the oil in a large pot over medium heat. Add the onion and celery and saute for 3 to 4 minutes, until softened. Add the garlic, salt, and pepper, and cook for another 30 seconds.

Add the asparagus and broth. Add the asparagus and broth, bring to a boil, then turn the heat to low. Cover and simmer for 20 to 25 minutes, until the asparagus is very tender.

Finish and blend it up. Add the avocado, lemon juice, and herbs, then use an immersion blender to blend the soup until smooth, or transfer the soup to a high-powered blender, and blend for about 30 seconds, until smooth.

Garnish and serve. Ladle portions of the asparagus soup into bowls and garnish with a drizzle of olive oil and some asparagus tips.

I needed a fresh, healthy, dairy free spring recipe when my niece came to town. This froze well and was delicious and creamy!! Next time I’ll sauté some spicy pumpkin seeds for garnish.

This soup is absolutely delicious!! And I even cheated with bottled lemon juice and dried parsley. With eating gluten and dairy free, it's so nice to find a "normal" recipe that I can make without modifications. I will definitely be making this again!

This was one of the EASIEST and most flavorful recipes I’ve made yet! It was such a relief I had all the staples ingredients on hand so no special grocery store runs needed.  My husband couldn’t stop raving about the creamy deliciousness he was enjoying and couldn’t believe it was milk free.  We both tried it on the cooler side like a gazpacho, 100% recommend.  Topped with few pepitas , olive oil, parsley and asparagus sprigs, oh my… my mouth is watering!

I was admittedly surprised at how good this soup turned out! And how, with just a few ingredients, you can have spring-in-a-bowl. Not only that, but my kids loved it too, and asked for seconds. This is my #1  site for Lent recipes, and this one is an absolute keeper, thanks Lisa!

Made this recipe last night! The soup came out a beautiful creamy texture and I would liken it to pea soup. I made bacon bits and threw a dollop of sour cream on top to finish it off.
